-This will be your new favorite fall recipe. Make cute pumpkin desserts in the shape of footballs for the ultimate game day snack. Start by preheating your oven to 350 degrees then grease 12 egg-shaped muffin cups. Set the pans aside. Measure 2 cups of all-purpose flour into a mixing bowl then add 2 teaspoons of ground cinnamon, 1-1/2 teaspoons of baking powder, 1-1/2 teaspoons of baking soda, a half a teaspoon of salt, half a teaspoons of nutmeg, and a quarter teaspoons of ground cloves. Stir well and set the bowl aside. In another bowl, beat 4 eggs lightly. Add one 15-ounce can of pumpkin, two-thirds cup of packed brown sugar, two-thirds cup of granulated sugar, and a third cup of vegetable oil. Whisk everything together until it's smooth. Add about a third of the flour mixture and stir until it's just combined. Add another third of the flour mixture and stir again. Add the remaining flour mixture and stir until the flour is just combined. Spoon the batter into the muffin cups, filling each one about halfway. Bake the cakes until their top spring back when lightly touched. This should take 20 to 22 minutes. Remove the cakes from the pan and cool the on wire rack. Check to see if they sit flat when you invert them. If not, you can trim the tops a little so they do. Use a serrated knife to evenly split each cake in half horizontally. For the filling, beat a third of a cup of softened butter in a large bowl until it's smooth. With a mixer on low, gradually add 1-1/2 cups of powdered sugar and beat it well. Add 3 tablespoons of milk and 1 teaspoon of vanilla and continue beating. Gradually add enough powdered sugar to make a frosting with a good consistency for spreading. This will take anywhere from 1-1/2 to 2-1/2 cups more. Spread the frosting over the bottom half of the cakes. Then top the filling with the other half of the cake. Place some of the frosting in a piping bag fitted with a writing tip. Carefully pipe football laces on the top of each filled cake. And there you have 'em, pumpkin football cakes. They're guaranteed to be a fan favorite.
