Delicious Strawberry Bar Dessert

Looking for a new way to enjoy strawberries? Try these fresh strawberry bars. The peanut butter bar cookie makes a chewy base for a topping of strawberry jam and fresh berries. Think the ultimate PB&J. To start, heat your oven to 350 degrees then line a 9 x 13 x 2-inch baking pan with foil, leaving enough foil to extend well beyond the edges. This will help you remove the cooked cookie base easily from the pan later. To three quarters of a cup of softened butter in a large mixing bowl, add three quarters of a cup of peanut butter. Using a hand mixer, beat for 30 seconds on medium-high speed. Add one pack cup of brown sugar, a half a cup of granulated sugar, two teaspoons of baking powder, and a quarter teaspoon of salt. Beat until everything is just combined. Add two eggs and one teaspoon of vanilla extract, and again, beat the mixture to combine. Now, gradually beat in two and a quarter cups of all-purpose flour, adding as much as you can using the mixer. The dough will get rather stiff, so you will probably have to stir in the last couple additions of flour by hand. Spread the dough in the foil-lined pan and be sure to spread it all the way into the corners. Bake it until the top is lightly browned. It should take about 25 minutes. Check for doneness by inserting a toothpick near the center to see if it comes out clean. Cool the peanut butter bar completely on a cookie rack. Now, use those foil handles to lift the cookie out of the baking pain. Spread the top with a half a cup of strawberry jam. Top it with four cups of small ripe strawberries that you halved or quartered. This peanut butter base is easy to make and have. You can store it at room temperature for one day, or even better, freeze it for three months, so when strawberry season arrives, you're well prepared.
