Cheese Balls Get Better with Bacon!

-How do you improve on the classic cheese ball party hors d'oeuvre? Add bacon of course. These bacon cheddar cheese balls are creamy and crunchy with a little bit of hot and sweet. Perfect for spreading on bread or celery sticks. To begin, combine two 8-ounce packages of softened reduced fat cream cheese with 1 pound of finely shredded and also softened extra sharp cheddar in a large ball. Next, add a 2-ounce jar of sliced pimentos that you've rinsed, patted dry, and chopped as well as one quarter cup of apricot preserves, 2 tablespoons of milk, 1 teaspoon or Worcestershire sauce, 1 quarter teaspoon of hot pepper sauce, and 4 to 5 slices of cooked crumbled bacon. Beat everything with an electric mixer on medium speed until it's almost smooth. Scrape down the sides if necessary. Now, cover and chill this mixture for 2 hours or until it's fairly firm. Divide the mixture in half and roll each portion into a ball on waxed paper. Chill them again. Up to 4 hours before serving the cheese balls, roll one of the cheese balls in one-third cup chopped pistachios and roll the other in 5 slices of crisp crumbled bacon. Serve the cheese balls with cucumber slices, dried apricot halves, and slices of toasted baguette. Cheers!
