30-Minute Dinner: Pork Sandwich with Tarragon Apple Slaw

Today, we're making a delicious pork-sandwich with tarragon apple slaw. This easy weeknight family meal comes together in no time. Let's begin with our apple slaw recipe. Cut 2 apples into matchsticks. Combine the apples with 2 tablespoons of lemon juice, 1 tablespoon of olive oil and a quarter cup of fresh nipped tarragon. Season to taste with salt and pepper and toss to combine. Time to get going on our pork loin. We're using a 3-ounce piece per sandwich. Lay the pork between 2 pieces of plastic wrap. Using the smooth side of a meat mallet, gently pound the pork, keeping the fitness even. Season the pork with salt and pepper and set aside. I've got 3 dishes setup for my pork loin breading station. The first has half a cup of flour that has seasoned with salt and pepper. The next with 2 eggs beaten and the last with half a cup of Panko bread crumbs. First, dip your pork in the flour. Make sure you get all the sides covered. Next, dip in the eggs, and finally, in the Panko. Heat vegetable oil in a large frying pan. Add the pork and cook 3 to 4 minutes on each side until golden. Remove and drain on paper towels. Okay, let's put our pork sandwich together. Add 1 tablespoon of Mayo and Dijon mustard to your sandwich spread. Add the pork and top with apple slaw. And that's all it takes to whip up this delicious pork sandwich with apple slaw.
