This recipe for Greek Frozen Yogurt lets you enjoy the wholesome goodness of Greek Yogurt as a frosty creamy treat. All you need is an ice cream maker and a little imagination to make your favorite flavors right at home. First, follow the manufacturer's instructions for your ice cream maker. If the insert canister requires freezing, do that first. There's a touch of tartness to this recipe from the plain yogurt and fresh lemon juice. You'll need a quarter cup of lemon juice, which should be between 1 and 2 lemons. Squeeze the juice, removing the pits. Add the lemon juice to 3 cups of plain, low-fat Greek yogurt-- that's the 2 percent variety. Add one cup of sugar. Two teaspoons of vanilla, and then 8th of a teaspoon of salt. Whisk the ingredients until the mixture is smooth. Place the yogurt mixture in 1-1/2 to 2 quart ice cream maker. Turn and freeze according to the manufacturer's direction. For a very frozen yogurt, simply add one cup of fruit during the last minute of mixing. You can use sliced strawberries or whole raspberries, blueberries, blackberries or even a mixture of fruit. When the machine is done doing its work, transfer the frozen yogurt to an air-tight container. Place the container in the freezer for at least 2 to 4 hours to harden. If time permits, ripe in the frozen yogurt in your freezer for the full 4 hours before serving in order to achieve a better texture and prevent the yogurt from melting too quickly. Ripening also allows the flavors to deepen. Right before serving, you want to let the frozen yogurt stand at room temperature for 5 to 15 minutes so it's a bit soft and easy to scoop. It's delicious as is, slightly tart with a touch of vanilla. You can think of it as a base to build different flavors. You can find some more variations listed with the recipe.
