How to Make Cherry Berry Shortcake Stars

Today, we're making festive cherry berry shortcake stars. Let's get started. To begin, combine 1-1/2 cups of tart red cherries, 1-1/2 cups of blueberries, and 1/3 cup sugar. Mix with a fork and set aside. Meanwhile, we'll get started on the shortcakes. To a large bowl, add 2 cups flour, 1-1/2 teaspoons baking powder, and 1/4 teaspoon salt. Next, add 1/3 cup butter. Using a pastry blender, cut the butter into the dry ingredients until coarse crumbs form. In a separate small bowl, add an egg, 1/2 cup whipping cream, 1/4 cup honey, 1/4 cup chopped tart red cherries, and 1/4 cup chopped blueberries. Add this to the flour mixture and gently stir with the fork until it just comes together. Then, turn the dough out onto a floured surfaced. Pat the dough until it's about 3/4-inch thick. Using a cutter that has been dipped in flour, cut out the shortcakes. Dipping the cutter into flour between each shortcake prevents the dough from sticking. Then, place on a baking sheet 1-inch part. Bake the shortcakes 12 to 15 minutes or until golden brown. Cool on the baking sheet for 5 minutes while you make the vanilla whipped cream. For the whipped cream, in a small bowl, combine 1/2 cup whipping cream and 1 teaspoon vanilla. Using an electric mixer, beat the mixture until soft peaks form. Serve the star-shaped shortcakes with the sugar berries and a dollop of whipped cream.
