-Today, we're showing you how to make carrot cake with a delicious mango twist. Start by greasing and flouring two 8-inch round cake pans. I like to use a stick of softened butter and a pastry brush to do this. For the dry ingredients, combine flour, baking powder, salt, and nutmeg. For the wet ingredients, start by beating a stick of butter on medium speed for 30 seconds. Next, add granulated sugar. Beat this until combined then continue to beat for 2 more minutes. Add the eggs one at a time, beating well after each. Alternatively add half the flour mixture and mango juice blend. Be sure to be on low after each ingredient is added just until combined. Now, stir in the shredded carrot. The batter is done. Time to pour into our prepared pans. Bake 25 to 30 minutes. You'll know the cake is done when a toothpick inserted near the center comes out clean. Remove the cakes from the oven and cool in the pans for 10 minutes then remove from the pans and cool completely. Time to make a simple glaze. Bring a half cup of the mango juice blend to a boil. Boil for 3 to 4 minutes until reduced to about a quarter cup. Cool the glaze completely and set it aside. Finally, it's time for the best part, the cream cheese frosting. Start by beating together the cream cheese and butter until smooth. Beat in the vanilla then gradually beat in powdered sugar until smooth. Want to make your cake look pretty enough for company? Make carrot ribbons to place on top. I like to use a vegetable peeler to slice the carrots lengthwise then place in a bowl of iced water for at least 30 minutes. Finish by draining and patting dry with a paper towel. Now that we've got our cake, our glaze, our frosting, and our topper, we're ready to put it all together. Start by spreading half the cream cheese frosting on one of the cake layers. Top that with the second cake layer and spread on the remaining frosting. Use a spoon to drizzle the mango glaze over the cream cheese frosting then finish by topping it with our carrot ribbons. Mango carrot cake simple enough for a weekday, pretty enough for company.
