A good strawberry pie is as much about the glaze as it is about the berries. The secret is to make your own glaze from fresh berries, which is easier than you might think. Hull and chop fresh strawberries. Then, pulse with water in a blender or a food processor until smooth. Next, in a saucepan, combine sugar and cornstarch. Then, stir in the strawberry mixture. Cook over medium heat until the mixture is thick and bubbly. Although you might not need to, you can ramp up the color of the glaze with a drop or 2 of red food color. Then, gently toss the berries with the cooled glaze. Spoon the mixture into your baked pie shell and chill until the glaze sets up about an hour or so, if you can wait that long.
