First, look at the top, it should be set and no longer shiny or wet looking. The edges should look set and dry but shouldn't pull away from the sides of the pan like cake sometimes do. After you take the brownies out of the oven, they will continue to set up as they cool. So getting them out sooner rather than later definitely ups the fudge factor.
