-Potato soup takes on a whole new flavor when you start with baked potatoes. Think about it, boiled potatoes in variably absorbs some of their cooking water diluting their flavor. Baking them gives the potato a delicious roasted flavor and a fluffy texture. Another bonus, no peeling or chopping required. Just bake the potatoes in a 425 degree oven for 40 to 60 minutes or until they're tender. Cool them slightly then scoop out the flesh and prepare the soup. Now, doesn't this look good?
