How to Cook Eggplant

-Wondering how to cook eggplant? The first step is selection. Choose an eggplant that is heavier than it looks and smooth skin with no cracks. Begin by slicing the cap and stem end off the eggplant, then cut crosswise into 3 quarter inch thick slices. I prepared my eggplant breaded, I mean, who wouldn't. So, first, I'll dip the eggplant slices in beaten eggs. Next, they coated in a mixture of panko, salt, and pepper. Add the breaded slices to a skillet with hot oil over medium heat and cook until golden turning to evenly brown both sides. Remove the eggplant from the skillet and it's ready to eat. I'm topping mine with some Marinara with Parmesan for a simple meatless dinner even carnivores will enjoy.
