Cherry Chocolate Brownies
-Today, we're baking a decadent batch of cherry chocolate brownies. We'll start by infusing our dried cherries with port. In a small saucepan, bring the port and water to a boil. Add dry cherries and reduce the heat to low. Cook and stir until the fruit is soft and plump and the liquid has evaporated. Transfer the cherries to a small bowl and set them aside to cool. Time to make our brownie batter. We'll start by melting butter and chocolate in a heat-proof bowl set over a saucepan of simmering water. Heat just until the chocolate is melted. We don't wanna heat the mixture so much that the butter and chocolate separate. Remove the bowl from the heat and stir until the butter and chocolate are smooth. Add the sugar whisking until fully incorporated. Then, add the eggs one at a time whisking until the batter is smooth and glossy. Next, add in a little salt, and finally, we'll gently whisk in the flour stirring only until it disappears into the batter. Now, let's add some extra goodness. Using the spatula, stir in the port-soaked cherries along with the chocolate. Pour the batter into an 8 x 8-inch pan lined with foil and bake in a 325-degree oven for 35 minutes or until the top is dull and a knife inserted into the center comes up clean. When the brownies have cooled to room temperature, cut them into squares. Time to enjoy a sweet bit of chocolate indulgence.
