-I??m Sue with the Better Homes and Gardens test kitchen. You know, I hear it all the time, ??I can??t make pie dough.?? And I??m here to tell you yes you can with our secrets to success making perfect flavorful flaky pie dough is well- is easiest pie. Come on, let me show you what I mean. First, mix the dry ingredients in a bowl, then cut in the fat usually butter or shortening, but sometimes lard or combination of any of them. Our favorite tool for this is a pastry blender, but if you don??t have one, you can also use 2 table knives. Regardless of what you use, the key is to blend in the fat just until the pieces are about the size of peas. Small, visible chunks of fat in the dough will create flakiness during baking and that??s what you want. Next, add cold water, gradually pouring it into the flour mixture blending with the fork. Why cold water? You ask. Good question. It??s important to keep the fat as cold as possible so that they don??t melt into the dough during mixing. That can make baked crust sandy or mealy. The secrets here are to not mix the dough too much, which can cause toughness and to not add too much water, which will make the dough sticky and require lots of extra flour during rolling. As the dough starts to hold together, push it aside with the pork, then dribble in a teaspoon or 2 of additional water if there are still ingredients at the bottom of the bowl. This trick will help to avoid overworking the dough. Next, depending on the recipe, roll the dough out or wrap in plastic and chill.
