How to Melt Chocolate
Learn the best way to melt chocolate over direct heat on your stove.
When recipes call for melting chocolate, a direct heat method is easy and convenient. For best results, coarsely chop chocolate bars in squares before melting them. Place the chocolate in a heavy saucepan over very low heat, stirring constantly until the chocolate begins to melt. Always stir chocolate during melting because most chocolate retains its shape as it melts. When the chocolate is nearly all melted, and there are still some chunks, remove the pan from the heat and stir the chocolate until it is smooth.
