Salmon & Noodle Bowl

Better Homes and Gardens Everyday Easy Meals. A satisfying noodle bowl topped with a healthy salmon steak is sure to be a hit especially when you can get this gorgeous on the table in less than 30 minutes. It takes just 5 main ingredients; some jarred sweet peppers, reduced-calorie balsamic vinaigrette salad dressing, some frozen spinach, a pound of salmon, and some fresh fettuccine. From your pantry, pull a little olive oil and salt and pepper, and that's all you need. Get your water boiling so you can cook up your pasta. I like to add a pinch of salt to the water. And while that's cooking, you can get your salmon going. Brush it with a little oil, season with salt and pepper and then cook it for 8 to 12 minutes using an extra large skillet over medium heat. This can be a little temperamental, so don't fuss with it a lot. Turn it just once and then remove it from the skillet and cover to keep it warm. Now, in the same skillet, you're going to add a couple of tablespoons of olive oil then put in your spinach that's thawed and drained. Add in a half cup of bottled roasted red peppers. The pasta is ready, so I'm going to add that right into the skillet and give it a stir. And the last step is to add the balsamic dressing, just a splash, and I'll give that a good stir. Serve this up in bowls and top with the piece of the salmon. And if your family loves Asian flavors, try this. Instead of using fettuccine, use whole-wheat soba noodles; and instead of balsamic vinaigrette, use Hoisin or plum sauce, then with a little broth and soy sauce. It changes the entire dish with just 2 simple substitutions. There's no reason not to have a home-cooked meal when it's an everyday easy meal.
