Skillet Vegetables on Cheese Toast

Better Homes and Gardens Everyday Easy Meals. Rich crusty bread is the base for this vegetarian dinner. With so much flavor, you'll never miss the meat. And it takes only 30 minutes to go from skillet to table. Pick up a carton of button mushrooms, a package of whole fresh baby carrots, a small red onion, a 4-ounce package of soft goat cheese, and your favorite french bread. You'll also need a little olive oil and some fresh garlic. And if you like the flavor of basil, fresh basil leaves are a great addition. Start by cutting your bread into nice diagonal slices. Place the bread on the baking sheet and get the broiler preheating. Slice your onion into thin wedges. Halve the mushrooms. Halve the carrots. And coarsely chop the garlic. Put a little olive oil in the skillet over medium high heat. Let that oil heat up then all of the veggies go right in. You only need to cook the vegetables for 2 to 3 minutes or just until they start to brown. Now, add 2 tablespoons of water. Cover and cook over medium heat for 5 minutes. While the veggies are finishing, we're just going to pop the bread under the broiler for just a couple of minutes. You just want to lightly toast it and pull it back out. Spread some goat cheese on 1 side of the bread and then back under the broiler for another minute or two. So now, we're going to put it all together. We're going to plate up our bread, spoon over our yummy vegetables, add just a drizzle of olive oil and some fresh basil leaves. So delicious and it's so easy to change up the flavors. Make this more Italian by using mozzarella cheese instead of the goat cheese. Substitute fresh tomatoes or sweet peppers for the carrots and serve it all with the drizzle of pizza sauce. There's no reason not to have a home-cooked meal when it's an everyday easy meal.
