Better Homes and Gardens Everyday Easy Meals. This dinnertime idea makes the most of that summertime staple, zucchini. Paired with the Mushroom Ragu, the zucchini goes from simple side dish to easy entre and just 30 minutes. You need to pick up just 5 main ingredients; an 8-ounce package corn muffin mix, a cup of cheddar cheese, a cup of bottled roasted red sweet peppers, a zucchini, and 12 ounces of your favorite mushrooms. From your pantry, pull some olive oil and some cayenne pepper, an egg, and a quarter cup of milk. Start by coating your muffin pan with some nonstick spray and make sure your oven is preheating to 400 degrees. And now, we're going to make our zucchini cakes. You need about a cup of shredded zucchini. Mix that together with the muffin mix, the cheese, milk, egg, and a dash of cayenne pepper. Spoon that mixture evenly into the muffin cups and pop it in the oven. Those will bake for about 12 minutes so while they're baking, make the Mushroom Ragu. Get some olive oil heating up in the skillet. I've chopped up some mushrooms. I like those on the chunky side. This will only take about 3 to 4 minutes, so keep an eye on them, and make sure you season with salt and pepper. The last step is to give your roasted red peppers a quick whirl in the food processor. You want this to be nice and smooth. The zucchini cakes are done and they look perfect, so now I'm gonna put all of these together. Put 3 of the cakes on each plate. Spoon some of the mushrooms on there and drizzle the roasted red pepper sauce. It's fresh, fast, and budget friendly and really easy to tweak. A couple of simple substitutions and you've got a Mediterranean meal. Instead of mushrooms, saut some more zucchini or some yellow squash and season it with some oregano and sprinkle the whole thing with some crumbled feta. There's no reason not to have a home-cooked meal when it's an everyday easy meal.
