Pounding Meat & Poultry
Thin, quick-cooking cutlets of chicken, pork, or beef are perfect for weeknight dinners. If you can't find them in your grocery store, you can easily make your own. (It'll save you money, too.)
Sometimes meat or poultry is pounded to make it a uniform thickness for even cooking or to make it thin enough to roll. Place meat in a Ziploc bag. The meat can be pounded with the smooth side of the mallet or the bottom of a heavy skillet. Pounding meat also breaks down tough fibers, making it more tender.
