This playfully shaped cookie looks fun and tastes great. The dough's light butter flavor is a perfect match for the cream cheese and dried fruit filling.
Pinwheels with a surprise. These are filled with a dry fruit filling that is as delicious as it is beautiful and super simple to make. Hi, I'm Sandra Lee. Now, for this great cookie dough recipe, I want you to go to bhg.com/recipes. But the first thing you're gonna do when you make your cookie dough is you're gonna roll that out and put it `em on a piece of wax paper just like this. And for the beautiful fluted effect you see here in the cookie dough, all you need to use is a fluted pastry wheel. Now, you're gonna roll it up the center and around all the edges. And then what I want you to do is roll it across just like this so that you have perfect squares. Now, take each of your squares, and you're gonna transfer this onto another baking sheet. Roll it over carefully, just like that and move it right here. Now, you're gonna make just additional cuts like I've done so with your pastry wheel into the center, but not all the way. This is just going to allow you to fold your cookie dough to make the beautiful pinwheel shape. Now, it's time for a delicious filling. You can find all sorts of fabulous filling recipes at bhg.com/recipes, but this one is just cream cheese, some sugar, and some dry cranberries, and maybe some apricots is what I have in here, but certainly feel free to do whatever you want. The most important thing is that when you put this into your cookie, what you do is use a very little amount because you can't have too much in here. Simply fold in your corners at the edge just like this and put it in the center, working your way around your cookie. Just make sure you pat that center because you want this to be nice and firm in the center to hold in the filling. Now, you're gonna bake this for 8 to 10 minutes until they're golden brown, and you're gonna have beautiful, beautiful pinwheel cookies with a nice surprise inside. From everyone here at bhg.com, we wanna wish you a very happy, a very healthy, and a very sweet holiday season.
