Cookie with Candied Filling
This fancifully shaped filled cookie is as easy as it is delicious. The spice dough can be made up to 3 months ahead, so it's ready when you need it.
2 corner envelope cookies with candy filling. Don't those look delicious? And they are so simple to make. I'm Sandra Lee, and I can't wait to show you this super quick recipe. Now, you wanna start off with a basic sugar cookie dough recipe, and you can get that at bhg.com/recipes. But I want you to embellish that with just a little bit of ground ginger, ground clove, and cinnamon. Then you're just gonna roll this out unto a cutting board, and I want you to cut just 15 individual squares here. I'm gonna finish this off just like that. Then unto a baking sheet, I'm gonna let 2 of these squares and place these down. By the way, when you're working with your sugar cookie dough, make sure that it's nice and ice cold. That's gonna make your life a lot easier. Now for that delicious candy filing, all this is is just some cream cheese, some sugar, and some miniature chocolate chips. So delicious and easy. But if you want to, you can certainly use any of the fillings available at bhg.com/recipes. Put a little bit of this right in the center and a little bit here, and now to fold it over. This is very simple to do if you know what to do. All you wanna do is just brush a little bit of water, which acts as an adhesive onto the corner of your cookie square. Then take this side, roll it up, and with the corner that's wet, roll this up and hopefully it won't break. Roll this up, push it together. Now, if it breaks at all, it's very simple to fix with your fingers. On the top of that, I just want you to put a large chocolate chip, and that's it. They bake off in 8 to 10 minutes and you're gonna have delicious cookies on your table in no time that everyone will love. From everyone here at bhg.com, we wanna wish you a very happy, healthy, and sweet holiday season.
