What’s the recipe for success for your holiday cookies? Royal icing!

With this one basic recipe, you can create all of these beautifully iced cookie. Royal icing is the workhorse of all icings and I got to tell you this is a super duper easy recipe. So to start, we need about a pound of powdered sugar. This is 3 and a quarter cup. I'm gonna stick this into my mixing bowl. This is meringue powder. This is 3 tablespoons. You can get meringue powder pretty much if you got a craft store and they've got a cake decorating section, they should have meringue powder in there. This is really important so that you get the right consistency in your icing. So I'm gonna stick that in there. And then your final ingredient is half a teaspoon of cream of tartar. Now it's time for the wet ingredient. A half a cup of water and I need some vanilla, but this isn't ordinary vanilla. This is actually clear vanilla. So if you use the regular vanilla extract you find at your grocery store, it's gonna make your icing a little bit yellow, but this gives you a nice, clear, crystal white icing. A teaspoon of vanilla. Stick that in there, and now, it's time to beat it. So I've beat it for about 10 minutes, but you're not gonna be so worried about the time. What you really want to look for is you want to look for the right consistency, and you can see when I pull up my mixer like that, you get those high peaks. That's the consistency that you need. So I've got some that I've actually put into a piping bag already, and you can see when you've got your icing at that consistency, and you've got it in a little piping bag, you can do all sorts of cool things with it like that. White icing is great, but you're probably thinking, you know, "How do I make it all those cool holiday colors?" Super easy. You start out with some food coloring paste. This is different than the liquid stuff 'cause the liquid stuff is actually gonna water down your icing a little too much. So you're just gonna take a tiny bit of this, and a little goes a long way with this stuff, so you want to make sure you don't spread it all over stuff you don't want to color. So I've got my color pretty much mixed up in there and now, I'm gonna show you how you can kind of dilute this a little bit to make a graze that you can use to cover up your cookies with. So what you want to do is you want to add about a tablespoon of water at a time so that you can make sure that you get the write consistency. And that seems just about right. You can see it's kind of like the consistency of a really thick glue. I'm gonna just gonna take a spoon and actually glaze the cookie. So you just grab some of it like that, and I'll glaze this one right here, and just pour into the middle, and it's gonna kind of pool and spread a little bit more. So with a little brush. This is a really great tool. You're just gonna kind of coax the icing right to the corners so that you get even coverage. So you can see how your brush mark disappears 'cause the glaze just fills in all the cracks. Simple and really versatile, royal icing is the recipe for success for your holiday cookies.
