Caramelized Pear-Ginger Cake

No one can resist this warm cake topped with pears and its own velvety caramel sauce. What a spectacular finish to any holiday meal.

" Caramelized upside-down pear-ginger cake is so gorgeous on your table, and this recipe makes 2. Just wait `til you see how simple it is. I'm Sandra Lee, and I've got a fantastic recipe for you. Now, in this sauté pan, all I've done is just take in some brown sugar, some butter, and some corn syrup and melted it all together. You wanna remove that from the heat before you add your vanilla. Stir that all together. This is gonna make the beautiful glaze on the top of your upside-down cake. Now, this goes into an ungreased 9-inch round cake pan. Just make sure that you evenly coat the bottom of this pan and you wanna do it quickly because this will set up rather fast. Now, to this, I just wanna add some chopped pecans, and then to this, I wanna put in some sliced pears. Now, when you place your pears into the pan, just do it so you're going from the middle to the outside which is going to create a beautiful decorative circle of pears. Now, this is just spiced cake mix right from the box. To this though I added an extra egg and some very finely chopped ginger, and there's a little secret to putting this cake mix into your cake pan. You need to spoon it in. You can't pour it because if you pour it, you'll move all those beautiful pears around. This is a nice thick batter and this recipe makes 2 cakes. By the way, this recipe is available on bhg.com/recipes. I'm just gonna finish the rest of this cake batter, and just spread this around so it's nice and even, and that goes into the oven for 30 to 35 minutes. Now, you wanna take this out. Let it cool. It's gonna shrink a little bit away from the pan, and then, you just flip it right upside down on either a cake pedestal or a regular plate. For the finishing touch, just add a little bit of powdered sugar over the top, which will give it a beautiful holiday festive finish.
