" Sometimes meat or poultry is pounded to make it a uniform thickness for even cooking or to make it thin enough to roll. Place meat in a Ziploc bag. The meat can be pounded with the smooth side of the mallet or the bottom of a heavy skillet. Pounding meat also breaks down tough fibers, making it more tender."
