" Creating a lattice top on a pie is easy and really makes a pie look special. From a double crust pastry recipe, roll up the second piece of dough. Cut the dough into 1/2-inch wide strips. You can use a sharp knife or a pastry wheel to make it prettier. You can use a ruler to keep the strips even, but it is also relatively easy to use your eye to guide you. Lay half of the pastry strips on top of the filling in one direction. Starting with the longest strip in the center, place successive strips down parallel to it at 1-inch intervals. Carefully fold alternate pastry strips back halfway. Place a pastry strip in the center of the pie, across the strips already in place. Slowly, unfold the folded pastry strips. Next, fold back the strips that were straight. Add another pastry strip at a right angle to the folded strips and 1 inch away from the last strip. Repeat the weaving process until the lattice top is complete. Trim the pastry strips even with the edge of the bottom of the crust. If you'd like, finish by pressing the edges with a fork."
