Recipes often call for raw ingredients to be coarsely chopped before they're cooked or processed further. Here's how to easily and safely use your chef's knife to coarsely chop foods.

" Coarse chopping with a knife uses a special technique. Use an appropriate, firmly fixed cutting surface. A damp towel under a cutting board keeps it from sliding around the countertop. Grip knife handle comfortably. For rough chopping, use the back half of the blade near the handle. Keep the tip of the knife on the cutting surface and the palm or fingers of your hand on the top edge of the knife near its point for more control, chopping even motions until the food is chopped how you want it."
