" Some recipes call for beating eggs until they reach a ribbon consistency or until they are thick and lighter in color. Sometimes it is just yolks and sugar; other times, it is whole eggs. Beat yolks and sugar, scraping down the bowl occasionally until, when the beaters are lifted, the mixture falls gently in a ribbon-like fashion and the eggs are thick and a lighter lemon color."
