This direct-heat method of melting chocolate is nearly foolproof. (No licking the spoon until you're done stirring.)

" When recipes call for melting chocolate, a direct heat method is easy and convenient. For best results, coarsely chop chocolate bars into squares before melting them. Place the chocolate in a heavy sauce pan over very low heat, stirring constantly until the chocolate begins to melt. Always stir chocolate during melting because most chocolate retains its shape as it melts. When the chocolate is nearly all melted and there are still some chunks, remove the pan from the heat and stir the chocolate until it is smooth."
