Zucchini Cakes with Mushroom Ragout

From your pantry, pull some olive oil and some cayenne pepper , an egg, and a quarter cup of milk. Start by coating your muffin pan with some nonstick spray and make sure your oven is preheating to 400 degrees. And now, we're going to make our zucchini cakes. You need about a cup of shredded zucchini. Mix that together with the muffin mix, the cheese, milk, egg, and a dash of cayenne pepper . Spoon that mixture evenly into the muffin cups and pop it in the oven. Those will bake for about 12 minutes so while they're baking, make the Mushroom Ragu. Get some olive oil heating up in the skillet. I've chopped up some mushrooms. I like those on the chunky side. This will only take about 3 to 4 minutes, so keep an eye on them, and make sure you season with salt and pepper. The last step is to give your roasted red peppers a quick whirl in the food processor.
