That's because they'll lose their crunch as the salad marinates in the fridge. Instead, combine the vegetables with the dressing, toss the coat and chill for up to 4 hours. Chilling the dressed salad really intensifies its flavor so don't skip this step. Even 30 minutes will do. Then, just before serving, add the almonds and noodles and toss to combine and, if you're really crazy about crunch, save a couple of cups of cabbage to add just before serving as well.
