We really want to flavor the beef to shine here, which is why we keep the seasonings to simple. Gonna set the oven at 250 degrees, a little lower than you'd normally do it because it helps set moisture and promote even consistent cooking. For the second part of roasting , turn the oven up to 425 degrees and continue roasting for another 30 to 40 minutes. This increase in temperature is going to help give the meat a really dark flavorful crust. Checking the temperature of the roast is the only way you're gonna know when it's done. So, after about 20 minutes at 425 degrees, use an instant read or dial thermometer to check the internal temperature of the meat. You're looking for about 125 to 135 for medium rare. Finally, I have one last Test Kitchen secret for you. Always let me rest before you carve it. So, take the roast out of the oven, leave it on the rock, loosely tent it with foil and let it rest for 10 minutes, flipping it over halfway through to let the juices redistribute. Now, don't worry. The meat is not gonna get cold in the 10 minutes of roasting . This actually gives you a little bit of time to get the side dishes on the table before carving. Now, you know

    Gardens. Today, I'm gonna show you how to make an impressive rib roast for your holiday celebrations. I'm going to start by making the rub. I'll pulse together thyme, peppercorns, and garlic in a food processor with on/off pulses until everything is combined. Then, I'm going to add the olive oil and continue pulsing to form a coarse paste. I want to get some nice caramelization on the outside of this roast both for appearance and for flavor. So, after rubbing the roast with kosher salt, I'm going to get the oil in my skillet nice and hot. Then, I'm going to sear the meat for a few minutes on each side until it is a rich-brown color. I've placed the seared meat in the roasting pan, and now, I'm going to rub the delicious thyme and garlic paste over the whole roast and then drizzle it with butter before I put it into 350-degree oven for two to two and a half hours. While the roast is cooking, I'm going to work on the Jus or sauce. I've sauteed the shallots and garlic in hot olive oil, and now, I'm going to remove the skillet from the heat to pour in the white wine. Then, I'll simmer the wine mixture to reduce it by half. Next, I'll pour the beef broth into the white wine mixture. I'll continue to simmer this mixture until it is reduced to one and a half cups which will really concentrate the flavors. I want to serve this roast medium rare. So, once it reaches 135 degrees, I'm going to take it out of the oven, remove it from the pan, and tent it with a few sheets of foil. While it's resting, the juices will redistribute throughout the roast and the temperature will go up 10 degrees until it reaches the perfect 145 degrees. Then, I can garnish it with some

    I??m Lauren with Better Homes and Gardens Test Kitchen. Roasting a chicken is a technique every cook should master, and with our Secrets to Success, you can cook it to perfection every time. Let me show you what I??m talking about. The really interesting secret is to roast on a bed of vegetables like thick slices of onions, stalks of celery or big chunks of carrots. The whole idea is to elevate the bird off of the bottom of the pan, so the air circulates and it doesn??t steam in its own juices. Of course a roasting rack works fine too, but if you don??t have one or don??t want to mess with cleaning one, this vegetable rack is a flavorful solution and you can even eat the rack. This secret isn??t just for chicken. It works for turkey, pork and beef roasts too. Since air circulation is so important in roasting , tent the chicken loosely with foil before putting it in the oven. The foil will trap heat of it and keep the temperature around it more even. But be sure the foil is loose or steam will get trapped inside and make the skin soggy. One last thing to keep in mind, always let the roasted chicken rest for at least 15 minutes before carving.
