And that's gonna cook the potato all the way through. Then we are going to drain em really, really well and let em cool completely. Then we are going to put them back in very hot oil which is gonna crisp em and brown em and give you this wonderful crispy, crusty french fry with this velvety smooth interior. So, our blanched fries have cooled and drained here and now it's time to fry them and serve them up hot, crispy, and salty. And we're gonna put em in small batches into the fry basket, it's only gonna take a minute or two to cook up anyway. The fry basket is a great asset in frying french fries .
