Cooking a turkey for Thanksgiving Day or other holiday requires a quality roasting pan. The low-sided, open pans are typically made of stainless steel and have sturdy handles designed for removing the heavy meat or poultry from the oven. Most roasting pans include a roasting rack to raise the meat or bird off the pan bottom, allowing heat to circulate around the food.
