This wine is from Chile, Valle Central region. This wine is obtained from Cabernet Sauvignon grapes grown in San Pedros vineyards ...at the Central Valley.. When the grapes reach the cellar they are cold macerated (11C) for 2 to 3 days and then starts the fermentation in stainless steel tanks at controlled temperatures below 28 C. There are pump-overs 3 times/day in order to obtain a wine with a good colour that keeps the full fruity quality of the grape. Before the alcoholic fermentation is finished, the wine is separated in order to finish the fermentation without any skins. Later, the wine is clarified and cold stabilized to avoid unpleasant sediment in the bottle. After sterile filtration, it is bottled, preserving its full structure and intensity.. The grapes macerate at low temperatures (10-12C) for 4 to 6 hours and then, go to the pneumatic press where first and second must are separated, leaving the option of mixing them later in the final blend. The must is left for decantation at low temperatures (11C) for 24 to 48 hours in stainless steel tanks. Clean must is separated and inoculated with selected yeast. The fermentation is carried out during 15 days in stainless steel tanks with controlled temperatures below 14C in order to develop and preserve the citric aromas and fresh character of the variety, added to its fruit intensity. Prior to bottling, the wine is clarified with bentonite, cold stabilized and filtered with sterile plaques.. Its colour is a pale yellow with green tones. Its aroma is fairly intense tropical fruit aromas stand out, such as pineapples and mangos.
