Shun

Shun named its Shima Steak Knife Set for Tokyo?s famous Shima Steakhouse, where diners from all over the world enjoy some of the w...orld?s finest beef. Inspired by Shima, Shun created a steak knife that can make even the world?s best steak taste better. Here?s why the right steak knife makes a difference: Much of the delicious flavor in steak is contained in its juices, which are held inside by the fibers of the meat. Cutting with Shima?s razor-sharp 16 edge means that far fewer meat fibers are cut with each slice, so that more of the juices and more of the flavor remain exactly where they belong?in the steak. Shima?s long five-inch blade with its slight recurve is designed for easy, one-pass slicing. Place Shima?s blade flat against any surface and you?ll see that the blade only touches the surface near the tip and at the heel. The rest of the blade is curved slightly inward. This shape is designed to ensure a smooth slice, whether pushing the blade forward or pulling it back. If the blade were flat, it would simply crush the steak, forcing you to ?saw? through the meat. With the recurve, you start the slice at the front of the blade and push forward or pull back through the entire length of the blade. The edge contacts the meat at a slight angle and has a smaller point of initial contact, making it much easier to slice the food?without the resistance and ?crushing? experienced with a blade that doesn?t have the recurve. The Shima?s recurved blade is also useful when cutting on a plate that has a lip. The shape enables the user to continue their slice all the way to the edge of the plate. Shima?s full-tang construction makes it an exceptionally well-balanced knife. The handle is slim, contoured to fit the hand, and tapers as it nears the blade. This enables a slight pinch grip for comfortable control. The slim, flat handle provides lateral stability, ensuring that the knife won?t rotate or twist in your hand. The combination of the slim handle and gentle contouring provides easy, nearly effortless control while dining. The PakkaWood handle scales, made of genuine hardwood and impregnated with resin, are beautiful, water resistant, and won?t harbor bacteria. As a finishing touch, Shima handles are decorated with inlaid steel rondels. Made in Japan. read more

In the kitchen or at the table, Shun can be with you whenever you need a knife. The Shun Premier Steak Knife Set is a great collec...tion of blades that can be used when the meal is finished cooking and ready to be consumed. The Shun Premier Steak knives feature the same quality construction as the other blades in the premier line complete with hand-hammered look on the side of the blades. The perfect finishing touch to a meal prepped with Shun Premier knives is the Steak Knife Set. The Shun Premier Collection harkens back to traditional craftsmanship of Japanese blades, including swords and knives. All blades are constructed of layers of Damascus steel for a sturdy blade that takes a sharp edge easily and retains it. The knives are sharpened to a single-bevel and fashioned extremely thin for precise cuts. A granton edge creates a semblance of a non-stick surface by allowing air between the blade and food so chefs can cut swifter and smoother. The side of the blade features a hand-hammered appearance (called Tsuchime in Japanese) for a look that resembles ancient blades constructed by hand. The signature Shun emblem is emblazoned on the blade and the base end-cap. Stainless bolsters hold each blade in perfect balance to the contoured handle. Made of dark Pakkawood the handle is given a D-shape for a more natural feel in the hand. The exposed wood-grain adds to the old world charm of the Premier knives. Shun has paid attention to every detail of every blade in the Premier Collection assuring each deserves to be called Premier. Set includes 4 steak knives. Blades measures 5 inches. read more

The Shun Premier collection is distinguished by hand-hammered blades and walnut-colored PakkaWood handles that evoke the artistry ...of traditional hand-forged knives. Hand-crafted in Japan, the blades are thin and lightweight. This steak knife delivers the razor-sharpness and balanced control that makes slicing into a perfectly cooked steak such a distinct pleasure. Blades feature a core of VG-10 "super steel" clad on each side with 16 microthin layers of high-carbon stainless-steel. The striking hand-hammered finish (tsuchime in Japanese) reduces drag when cutting and helps to quickly release food from the blade. Walnut-finish PakkaWood handles have a two-position design, providing a trigger grip for pull cuts and the perfect balance point for a pinch grip.
