The Shun Reserve slicing knife is a fantastic knife with a good length and a hollow ground blade. The Shun Reserve slicing knife h...as a 9.5" blade, on the longer side (they usually range from 8-10"). This length lets you slice a variety of items cleanly and easily, including roasts. The hollow ground blade of the Shun slicer reduces friction and sticking while slicing, so turkey or beef slices peel away cleanly. This is an heirloom knife that you'll be proud to pull out for special occasion dinners, or just routine usage at home. We were thrilled when we finally received our Shun Reserve knives. We've felt the absence of a SG2 metal knife since the Elite line was discontinued (SG2 is considered by many to be the best steel for use in kitchen knives. Why do we love these new Shun Reserve knives? Shun SG2 Super Gold ultra-premium "micro carbide" powder steel provides an extremely high performance knife, the core of the blade is SG2 steel The extremely dense and pure structure of the SG2 steel enables the knife to have and old an outstanding and durable cutting edge The outer layers of the blade are coated with 32 layers of stainless/nickel ladder-pattern Damascus for a gorgeous look, but also for easier cleaning and food release while cutting The Shun reserve feels "Rock Solid" in your hand due to it's sturdy blade combined with full tang construction and riveted handle The dark PakkaWood handle with burgundy striations are a mix of East meets West: An elegant, ergonomic and comfortable Western-style handle, but with Japanese touches like the inlaid mosaic Samurai family crest The thin blades are sharpened to a 16 degree angle (per side) for an incredibly sharp and high-performance knife 64 Rockwell (a measure of hardness) - a hard knife! The Shun Reserve series of knives are handcrafted (in more than 100 steps) in Seki City, Japan. Seki has been the heart of knife and sword making in Japan for centuries. Shun named its Shima Steak Knife Set for Tokyo?s famous Shima Steakhouse, where diners from all over the world enjoy some of the w...orld?s finest beef. Inspired by Shima, Shun created a steak knife that can make even the world?s best steak taste better. Here?s why the right steak knife makes a difference: Much of the delicious flavor in steak is contained in its juices, which are held inside by the fibers of the meat. Cutting with Shima?s razor-sharp 16° edge means that far fewer meat fibers are cut with each slice, so that more of the juices and more of the flavor remain exactly where they belong?in the steak. Shima?s long five-inch blade with its slight recurve is designed for easy, one-pass slicing. Place Shima?s blade flat against any surface and you?ll see that the blade only touches the surface near the tip and at the heel. The rest of the blade is curved slightly inward. This shape is designed to ensure a smooth slice, whether pushing the blade forward or pulling it back. If the blade were flat, it would simply crush the steak, forcing you to ?saw? through the meat. With the recurve, you start the slice at the front of the blade and push forward or pull back through the entire length of the blade. The edge contacts the meat at a slight angle and has a smaller point of initial contact, making it much easier to slice the food?without the resistance and ?crushing? experienced with a blade that doesn?t have the recurve. The Shima?s recurved blade is also useful when cutting on a plate that has a lip. The shape enables the user to continue their slice all the way to the edge of the plate. Shima?s full-tang construction makes it an exceptionally well-balanced knife. The handle is slim, contoured to fit the hand, and tapers as it nears the blade. This enables a slight pinch grip for comfortable control. The slim, flat handle provides lateral stability, ensuring that the knife won?t rotate or twist in your hand. The combination of the slim handle and gentle contouring provides easy, nearly effortless control while dining. The PakkaWood handle scales, made of genuine hardwood and impregnated with resin, are beautiful, water resistant, and won?t harbor bacteria. As a finishing touch, Shima handles are decorated with inlaid steel rondels. Made in Japan. read more
