Why Buy Shun Classic:

Born of the ancient samurai-sword-making tradition and hand-finished for precision and beauty, Shun Classic is an ideal choice for anyone buying their first Japanese knife or 50th. The high-quality line of cutlery makes a worthwhile addition to any chef's arsenal of tools--it's used by professional chefs and home cooks alike. Produced in the widest variety of specialized styles, the Classic line features both traditional European blade shapes and innovative cutting-edge designs.

Shun Classic's amazingly sharp blade is famous for both edge retention and ease of sharpening. Each blade has a core of VG-10 "Super Steel" with a Pattern Damascus cladding of 32 layers of high-carbon stainless steel--16 layers on either side. While the wood grain pattern enhances the knife's beauty, it also adds durability and stain resistance, and reduces friction when cutting.

NSF certified for use in commercial kitchens.

Detailed Features

 • Blade core consists of high-carbon VG-10, a Japanese super steel known for its edge retention, allowing the knives to hold their sharp edges for years.
 • Blades boast a 16-degree angle, making these the sharpest knives out of the box. This is sharper than traditional European blades, which are usually sharpened to 20-22 degrees.
 • Clad with 16 layers of SUS410/SUS431 Pattern Damascus stainless steel on each side for strength and flexibility. This metal is corrosion-resistant and easy to maintain.
 • Damascus styling adds to the beauty of the knife while the microscopic air pockets created by the cladding process reduces friction during slicing.
 • D-shaped handle fits in the palm and provides comfort and control, keeping the knife's handle secure in the hand during use.
 • Available standard in D-shaped handle styles or by special order in reverse D-shaped handle styles.
 • Pakkawood handles, made of resin-impregnated hardwood, are NSF Certified for use in commercial kitchens.
 • Produced in Seki City, Japan, the capital of samurai sword manufacturing.
 • Rockwell hardness rating of 60-61 ensures that it takes and holds its incredibly sharp edge longer.
 • Hand wash and dry recommended; limited lifetime warranty.

Shun

Shun named its Shima Steak Knife Set for Tokyo?s famous Shima Steakhouse, where diners from all over the world enjoy some of the w...orld?s finest beef. Inspired by Shima, Shun created a steak knife that can make even the world?s best steak taste better. Here?s why the right steak knife makes a difference: Much of the delicious flavor in steak is contained in its juices, which are held inside by the fibers of the meat. Cutting with Shima?s razor-sharp 16 edge means that far fewer meat fibers are cut with each slice, so that more of the juices and more of the flavor remain exactly where they belong?in the steak. Shima?s long five-inch blade with its slight recurve is designed for easy, one-pass slicing. Place Shima?s blade flat against any surface and you?ll see that the blade only touches the surface near the tip and at the heel. The rest of the blade is curved slightly inward. This shape is designed to ensure a smooth slice, whether pushing the blade forward or pulling it back. If the blade were flat, it would simply crush the steak, forcing you to ?saw? through the meat. With the recurve, you start the slice at the front of the blade and push forward or pull back through the entire length of the blade. The edge contacts the meat at a slight angle and has a smaller point of initial contact, making it much easier to slice the food?without the resistance and ?crushing? experienced with a blade that doesn?t have the recurve. The Shima?s recurved blade is also useful when cutting on a plate that has a lip. The shape enables the user to continue their slice all the way to the edge of the plate. Shima?s full-tang construction makes it an exceptionally well-balanced knife. The handle is slim, contoured to fit the hand, and tapers as it nears the blade. This enables a slight pinch grip for comfortable control. The slim, flat handle provides lateral stability, ensuring that the knife won?t rotate or twist in your hand. The combination of the slim handle and gentle contouring provides easy, nearly effortless control while dining. The PakkaWood handle scales, made of genuine hardwood and impregnated with resin, are beautiful, water resistant, and won?t harbor bacteria. As a finishing touch, Shima handles are decorated with inlaid steel rondels. Made in Japan. read more

Please follow these guidelines to maximize the performance of Mercer's knives:

After each use, carefully wash cutlery by hand with warm water and mild- to medium-strength soap; rinse and thoroughly dry it with a soft towel.
Cutlery should never be washed in a dishwasher: the intense heat and radical temperature changes may cause the handle to deteriorate; the blade edges will become dull through rubbing against each other; and caustic soap will cause staining and pitting of the blade.
Cutlery should not be soaked or submerged for long periods. Chlorine and bleach products discolor and pit stain-free and high-carbon steel. If chlorine or bleach products come in contact with the blade, thoroughly rinse off immediately.
Galvanic action--the transfer of electrons from one metal to another--may cause pitting on the blades. To prevent this, avoid long periods of soaking in aluminum pans or a stainless-steel sink, remove cutlery from condiments (such as mayonnaise) stored in aluminum or stainless-steel pans.
Always store cutlery in a cutlery block or sheath to preserve the cutting edges and prevent personal injury.
