The wasabi rhizome, a short root-like stem, has flesh that is very dense but quite fragile. As a result, graters made of metal are... not fine enough to grate wasabi into a fine paste and end up tearing and destroying the flesh of the root without coaxing much flavor. Ceramic ginger graters as well are often not abrasive or fine enough to grate the root into a paste. In Japan, chefs use a traditional specialty grater with a surface made of shark skin. The fine, sandpaper-like texture of shark skin is the perfect abrasive surface for making a fine wasabi paste without damaging the flesh and cells of the root. The surface of this ceramic grater is specially crafted to simulate the abrasive qualities of a traditional samegawa shark skin grater. It grates wasabi into a perfect paste, revealing texture and flavor from the wasabi root unachievable when using standard graters. It has a well and spout, making it easy to mix soy sauce or other liquids with the grated material. The grater works equally well with ginger, garlic and other root vegetables. Shark friendly and dishwasher safe. read more

A strainer is important when making miso soup to easily melt the miso and to catch the larger koji rice granules . This strainer i...s especially made for making miso soup. The mesh is semi-coarse, to allow many of the small flavorful, nutritious solids in the miso to pass through, while keeping out some of the larger bits of koji rice. The strainer comes with a pestle, which is used to incorporate the miso into the dashi broth. read more

Tokoroten is a Japanese dish made from a jelly called kanten. Inserting a block of kanten into the tentsuki and pushing it with th...e plunger forces it to extrude through the nylon filament grid lining the bottom, resulting in long gelatin noodles 1/8-inch thick. The noodles are typically eaten in summer, when they are chilled in ice water. There are many different flavorings that can be added to tokoroten noodles before serving, ranging from a ponzu-like savory soy sauce and vinegar mixture, to a sweet dark brown sugar syrup called kuromitsu. The thin, springy noodles provide a refreshing snack or a light accompaniment to a meal. read more
