A long time ago we made a knife with a very odd handle and an unusual shaped blade. We took it home to try it out and promptly for...got about it for nearly 6 months - finding it only when looking for something that would slice leeks in to extremely thin strips. This was the proto-eagle's claw and we were so impressed by how well it cut so finely and smoothly through everything we threw at it that we went back and looked again at the design from scratch. This larger of the two Eagle's Claws is our hands-down favourite knife. For the moment (we're fickle). The key is that the extended chine along the spine of the blade allows for an incredibly fine cutting edge extending all the way to the heel of the blade, and then up to the raised tip. This allows for a fantastic rocking action, but also means that the blade maintains its strength and rigidity throughout its length. The blade is made from Sandvik 14c28n, arguably one of the best knife steels available. The handle is made from brown and maple layered Richlite, an amazing material made from compressed, recycled paper - also found on skateboard ramps and guitar fretboards. As with all our knives, it's distinctive (and unique) hollow grind allows for a far superior cutting action. The hollow grind leaves a concave profile on the blade and reduces weight while retaining strength, requires less metal to go through each cut and makes the knife easier to sharpen and keep sharp. Every knife maker these days seems to have a gimmick - we don't, we have just re-engineered the chef's knife from scratch. After significant use, the steel particles become damaged and the edge cannot be brought back by honing, so sharpening is necessary. History and Heritage In 1884, Master Cutler Karl Elsener opened a cutlery shop in Ibach, Switzerland. There, he and the cutlers’ union he formed produced the finest steel cutlery, finished with the now-famous proprietary edge preferred globally by professional and home cooks. In 1891, Karl supplied the Swiss Army with its standard issue Soldier’s Knife and in 1897 with the Officer’s Knife. In 1921, after the death of his mother, Victoria, and with the advent of stainless steel, then known as “inoxydable” and used in the production of his cutlery, Karl changed the name of the company to Victorinox. It is from those humble beginnings that a worldwide icon was born.
