Yukihira pans evolved from metal cookware that was introduced to Japan in the Meiji era in the late 19th century. Traditionally, y...ukihira pans are made from sheets of hammered aluminum. The dimples that result from the hammering are the signature feature of a yukihira pan's appearance and also prevent food from sticking and burning. As a result of its utilitarian design as well as its simple but pleasing aesthetics, yukihira pans are one of the most widely used cookware vessels found in home and commercial kitchens across Japan. This yukihira pan is an evolution of traditional yukihira pans. By using stainless steel instead of aluminum, it increases the durability of the pan and also allows for compatibility with Induction Heat (IH) cooktops. Two spouts allow for pouring from either side of the pan. The pan is 7-Inch in diameter and has a capacity of approximately 50 ounces. There are markings on the inside of the pan of 400, 600, 800, 1000 and 1200 milliliters. read more

Sword making history in Japan dates back over 1,000 years, when master sword smiths practiced their craft making weapons for warri...ors. Modern Japanese kitchen knives are a descendant of these renowned swords, as evidenced in the details, ideals and spirit that have been passed down through generations that go into each tool. This particular knife has a santoku shape. Santoku shaped knives have a flatter cutting edge than a traditional western chef's knife, with very little upward curve at the tip. Therefore, this knife excels at tasks that require a single downward cut rather than a rocking motion, making it a good choice for prep work such as slicing, dicing and mincing. read more

Donabe are earthenware vessels used to make "nabemono", a warming one-pot meal popular during the winter. Traditionally, a portabl...e stove is placed in the center of the table and the pot is filled with broth and ingredients. There are many different variations of nabemono. Broths can be as simple as water flavored with a little bit of dried kelp, to stronger tastes made with chicken stock or miso. Ingredients often include seafood, poultry, pork, vegetables, tofu and udon. Nabemono is meant to be eaten as a communal meal, where diners sit around the table and pick items directly from the pot. This donabe "hot pot" is made in Shigaraki, Japan, one of the six ancient kiln sites in the country, with a long history of producing glazed stoneware. read more

An appropriate knife for the task at hand not only ensures that the job is done properly, but also makes the slicing, chopping and... filleting easier. Japanese kitchen knives are made in an array of shapes to suit specific uses. Made to time-honored standards and exacting detail, this knife set offers three of the most commonly used shapes in the Japanese kitchen. The deba knife has a thick spine, gradually narrowing to the knife's edge. This detail, along with the single-edged blade, allows for easy processing of whole fish and large fish fillets into smaller pieces. The yanagi knife is long and narrow and is the tool of choice when slicing fish for presentation for sashimi and sushi. Like the deba, it is beveled and sharpened on one side of the blade only. The single-edged blade, as well as its long and narrow shape, allow the user to slice the fish in one smooth motion, eliminating any damage or tears to the flesh. The nakiri knife has a rectangular shape with squared corners and a thin profile. It excels at cutting vegetables, even making easy work of processing an onion or cabbage into very thin slices. read more

Cook fluffy, glistening rice in this earthen pot. In addition to cooking plain rice, this pot is great for making rice with variou...s ingredients, known in Japan as "takikomi gohan". Recipes for takikomi gohan usually begin with a light dashi broth used as the cooking liquid in place of water and can include scant amounts of soy sauce, mirin and sake for additional flavoring. Vegetable and meat ingredients are then added. Some of the more popular takikomi dishes include matsutake gohan (matsutake mushroom rice), tai meshi (rice with sea bream fish) and gomoku gohan (rice with a combination of five ingredients). The pot has two lids. The inner lid creates extra pressure and steam and helps to prevent messy spill-over while the rice is cooking. The top lid is decorated with a cobalt blue radiating spoke design. read more

Scooping miso from its container can be a messy task. With a consistency similar to chunky peanut butter, once it gets stuck to a ...spoon, it can be difficult to remove for use. In addition, again thanks to its thick consistency, it is often difficult to incorporate into dishes such as miso soup, stews, dressings and marinades. This tool solves these problems. Thanks to its unique bulbous shape, this tool acts as both a scoop and whisk. Simply dip the bulbous end of the tool into the miso container and give it a twist and the miso will be caught cleanly inside the whisks wires. With the miso still caught in the whisk, it is then easy to stir into soups, dressing, marinades, etc. read more
