Because the ceramic wheels are not parallel to the sharpening groove, the angle at which the blade is sharpened will restore the razor sharpness of the knife.To use:Pour water into the sharpener. When water is in the wheel compartment the revolving ceramic whetstone is constantly being rinsed. The sharpener should always be rinsed with water after use by removing the cover.Firmly place sharpener on countertop and firmly grip handle with one hand.Hold the knife with your forefinger on the back of the knife, and place the knife blade perpendicularly into groove No. 1 (white wheel) and move blade back and forth with slight pressure 7-8 times, or as necessary. No heavy pressure is necessary.Place the knife perpendicularly into groove No. 2 (pink wheel) and, again, move the blade back and forth with slight pressure 7-8 times.When sharpening is completed, hand wash knife in hot water and carefully dry with a cloth or towel before use. Also rinse the sharpener with water after each use by removing the cover. read more
