While being keen and enthusiastic in the kitchen, we are a very (very) long way from being required to put in the hours and time r...equired by the professionals and are keen on lighter, more agile blades for our own use. For us, then, this knife is our most beloved. It is substantial enough to help us in our work, while being wieldy and dextrous at the same time. We also feel that, in terms of profile alone, it's one of the most beautiful knives we make. It took us a very long time to settle on a knife between our large and small slicers, and Classic is it. The the blade is made from Sandvik 14c28n, arguably one of the best knife steels available. The handle is made from brown and maple layered Richlite, an amazing material made from compressed, recycled paper - also found on skateboard ramps and guitar fretboards. As with all our knives, it's distinctive (and unique) hollow grind allows for a far superior cutting action. The hollow grind leaves a concave profile on the blade and reduces weight while retaining strength, requires less metal to go through each cut and makes the knife easier to sharpen and keep sharp. Every knife maker these days seems to have a gimmick - we don't, we have just re-engineered the chef's knife from scratch. Please note that all of our knives are made individually from scratch and take up to three weeks to complete - so at busy times it might take us a while to get our stock levels back up. When we first started making our first knives on the forge we were very much influenced by the Japanese aesthetic. Over time we re...turned to our roots, where we feel happier, but this bad boy is a legacy from that time. Longer, but lighter, than our Classi Chef it's perfect for those who are looking for a knife with reach and a good-sized cutting blade, but who are averse to too much heft. You can use it to carve if required and pretty much anything else you want it to do. It has a nice, slender handle allowing a pencil grip for long cutting motions and we feel holds it own against all-comers in this category. While being keen and enthusiastic in the kitchen, we are a very (very) long way from being required to put in the hours and time r...equired by the professionals and are keen on lighter, more agile blades for our own use. For us, then, this knife is our most beloved. It is substantial enough to help us in our work, while being wieldy and dextrous at the same time. We also feel that, in terms of profile alone, it's one of the most beautiful knife we make. It took us a very long time to settle on a knife between our large and small slicers, and this is it. Absolutely ideal for an enthusiastic home cook. The blade is made from Sandvik 14c28n, arguably one of the best knife steels available. The handle is made from dyed stabilised beech. As with all our knives, it's distinctive (and unique) hollow grind allows for a far superior cutting action. The hollow grind leaves a concave profile on the blade and reduces weight while retaining strength, requires less metal to go through each cut and makes the knife easier to sharpen and keep sharp. Every knife maker these days seems to have a gimmick - we don't, we have just re-engineered the chef's knife from scratch. Please note that all of our knives are made individually from scratch and take up to three weeks to complete - so at busy times it might take us a while to get our stock levels back up. Hone regularly, sharpen as necessary. Do not put in the dishwasher. The handle is created by using a combination of pink, orange and yellow dyes during the stabilisation process. Because different parts of the wood absorb different dyes at different rates, there will be some variation between the handle shown and the knife you receive. read more
