Featured in this book are authentic Italian recipes selected for taste and economy. Originally published after the Great War (Worl...d War I), its purpose was to provide directions for preparation of quality Italian meals during those times when keeping costs down and nutrition high are primary concerns. As stated in the Preface: "One of the beneficial results of the Great War has been the teaching of thrift to the American housewife. For patriotic reasons and for reasons of economy, more attention has been bestowed upon the preparing and cooking of food that is to be at once palatable, nourishing and economical. "In the Italian cuisine we find in the highest degree these three qualities. That it is palatable, all those who have partaken of food in an Italian trattoria or at the home of an Italian family can testify, that it is healthy the splendid manhood and womanhood of Italy is a proof more than sufficient. And who could deny, knowing the thriftiness of the Italian race, that it is economical? "It has therefore been thought that a book of practical recipes of the italian cuisine could be offered to the American public with hope of success. It is not a pretentious book, and the recipes have been made as clear and simple as possible. Some of the dishes described are not peculiar to Italy. All, however, are representative of the Cucina Casalinga of the peninsular Kingdom, which is not the least product of a lovable and simple people, among whom the art of living well and getting the most out of life at a moderate expense has been attained to a very high degree." Modern nutritionists have made us aware of the health benefits of traditional Mediterranean cuisine. This volume provides easy-to-follow directions for over 200 delicious menu items. read more

WELCOME TO MY ITALIAN KITCHEN AND MY BIGGEST PASSION: FOOD.Most of my family memories revolve around food, especially family holid...ays, and everyone knows how important food and wine are in Italian culture. Here are the recipes passed down from my nonnas (grandmothers) that reflect the warm, rustic flavors of Friuli, Italy: rich frico, risotto, and savory polenta. I also love the lighter bites, perfect with a glass of wine: crostini with ricotta and honey, or a tramezzini, the Italian version of English high-tea sandwiches. And I didn’t forget the sweets—from the tiramisu I made with my mother when I was eight years old to the famous basil panna cotta I made to help win me the title of MasterChef.I love to teach, and I’ll show you the fundamentals of fantastic Italian food, including homemade stock (I swear, it’s easy), pasta from scratch, and more. My Italian Kitchen is packed with the food that I love and that you and your family will love too. (Plus I’ll tell you some good behind-the-scenes stories from Season 4 of MasterChef!)Grazie! Risotto! We are never tired of this creamy and tasty dish made to perfection. The risotto proves that Italian cuisine is not just ...pasta and pizza, but suggests us a large variety of dishes one tastier than the other. The risotto expresses a certain lifestyle, a certain philosophy, an art, a desire. I would say everything fits in the ability to control ones appetite: you should know that while the consumption of pasta relates to a pressing need to eat quickly, the risotto instead requires patience. Of course all this is a result of culture, lifestyle, history, and geography. There is often a mystery related to the origin of a dish. When it appeared? How and why was it created? What is definite is that the dish appeared long time before it became a classic and a star on our tables. At the beginning it was just rice. What the Venetians realized over the centuries is that rice always needs a support to be highlighted. Thanks to the natural binder - starch, which gives the rice the tough and tender consistency, the risotto rice allows most “foreign” things to mingle perfectly with each other. According to historians of gastronomy and existing records the first risotto recipe dates back to the mid of 19th century. The first recipe is included in a cookbook by “Artusi”, one of the authors writing books about famous Italian recipes. The secret and success of the risotto has always been the rice, round grain and short rice such as the Arborio, the Carnaroli or the Nano Vialone, which contains high amylopectin content while being low in amylase. These characteristics of rice are necessary for the final texture of the dish, since high amylase rice, such as basmati rice, will tend to retain its starch. The rest of the ingredients vary according to the kinds of risotto we want to cook. The varieties of recipes will amaze you and with this risotto cookbook you will discover so many different tastes and flavors mixing rice with different ingredients. Don’t hesitate any longer and get this fantastic cookbook and start making your favorite risotto recipe. read more

Virtually anything and everything goes with pasta: meat, poultry, fish, seafood, vegetables, dairy, herbs, and oil. It is one of t...he world’s most versatile and adaptable foods. Being nourishing it is as well economic and easy to cook. The sauces for pasta can be quick and simple requiring short preparation time and few ingredients or can be elaborate and rich - all as you like. There are no rules about what pasta shape to serve with which sauce - it’s really all up to you. The Italians make more than 200 different sort of pasta with all kind of shapes, with about three times as many different names. New shape and “design” pasta are being produced all the time. Moreover, the same shape may have a different name in different region of Italy. It is the national treasure of the country. It would be hard to imagine if we didn’t discover pasta. It would make us as unhappy and incomplete as if Christopher Columbus had not attaint America. Pasta and noodles are more than staple foods: they are truly universal. Flour, water, oil and, where appropriate, an egg: it's simple but foolproof. Regardless of who invented them: with their varieties of sauces to infinity, pasta belongs to everyone, pasta belongs to you. All the experts are unanimous: starchy foods like pasta is not fattening, unless you consume excessive amounts. Indeed, they contain complex carbohydrates which are slowly absorbed by the body more efficiently delaying the return of hunger. It is easier to avoid "break" between meals. The real problem for pasta is rather how we prepare and we support the min sauces or grated cheese... So, there is a big difference between spaghetti in tomato sauce and spaghetti alla Carbonara! No anymore delay in getting this great pasta cookbook. Start to impress your friends and family but the most important is to please yourself by making some fantastic recipes with it. read more

Traditional and contemporary Italian recipes for vegetarian and nearly vegetarian dishes from the author of The Italian Slow Cooke...r Over the ages, resourceful Italian cooks have devised countless ways to prepare vegetables—all incredibly flavorful and simple. In this book, Italian cooking authority Michele Scicolone shares recipes that she gathered during years of traveling in Italy. Some, like Green Fettuccine with Spring Vegetable Ragu and Easter Swiss Chard and Cheese Pie, came from talented home cooks. Others, such as Stuffed Cremini Mushrooms, were passed down through her family. She encountered still others, including One-Pot “Dragged” Penne, in restaurants and adapted dishes like Romeo’s Stuffed Eggplant from the cookbooks she collects. Many recipes display the Italian talent for making much out of little: Acquacotta, “Cooked Water,” makes a sumptuous soup from bread, tomatoes, and cheese. In keeping with Italian tradition, some dishes contain small amounts of pancetta, anchovies, or chicken broth, but they are optional. Simple desserts—Rustic Fruit Focaccia, Plum Crostata—finish the collection. read more

Carina Contini and her husband Victor are the grandchildren of two immigrant Italian families that arrived in Scotland at the begi...nning of the last century. Their families have been at the heart of serving food in Scotland since then. Originally their grandparents were shepherds in the Abruzzi mountains. Weeks on end were spent up on La Meta, the highest peak in the Apennines, with their small flock of sheep and a few goats, making cheese over open fires. In their smallholdings down in the valley they would grow just enough to feed the family, with only a few pigs to supply enough sausage, prosciutto, lardo and salame for the winter. Vegetables like spinach, cavolo nero, potatoes and green beans. When they came to Scotland they opened cafes selling ice cream and then fish and chips and, of course, great Italian coffee. Carina's parents took over the family cafés in Cockenzie & Port Seton in 1952. With the end of rationing the food became more adventurous and Scottish classics also crept in. But remembering their heritage, the freshest and best ingredients were at the heart of everything they did. Fifty years on, Carina and Victor have Edinburgh's most highly regarded Italian restaurant, Centotre, and the award-winning Scottish Cafe at Scotland's National Gallery. They have regularly cooked for First Minister Alex Salmond and are given the special honour of cooking for Sir Sean Connery when he has been in Scotland. Ian Rankin, Jack Vettriano, Pippa Middleton, Brian Cox, JK Rowling and Nick Nairn are all frequent guests. They are passionate about the best local ingredients and work closely with over 50 artisan Scottish suppliers. This ensures that throughout the year they get the best of Scotland's larder. In recognition of her achievements and support for local, seasonal cuisine, Slow Food Chefs Alliance invited Carina to join as its first female chef in January 2012. read more

Nigellissima, like the Italian cooking from which it takes its inspiration, is a celebration of food that is fresh, delicious, and... unpretentious. Here Nigella Lawson serves up 120 straightforward and mouthwatering recipes that are quick and easy yet elevate weeknight meals into no-fuss feasts.  “It was when I was sixteen or seventeen that I decided to be Italian. Not that it was a conscious decision . . . No: I simply felt drawn to Italy,” writes Nigella. And so it was that before she was a Food Network star and bestselling cookbook author, Nigella found her way to Florence, where she learned to cook like an Italian.  Indeed, Italian cooking is trademark Nigella: light on touch but robust with flavor.  With beautiful color photographs to inspire, Nigellissima has all the hallmarks of traditional Italian fare in its faithfulness to the freshest ingredients and simplest methods.  From pasta and meat to fish, vegetables, and, of course, dolci, this cook’s tour has something for every mood, season, and occasion: Curly-Edged Pasta with Lamb Ragu is the perfect salve for a winter’s night, while tangy and light Spaghettini with Lemon and Garlic Breadcrumbs takes just minutes to prepare. Meatzza, the favorite at Nigella’s table, is a meatball mixture pressed into a pan and finished with traditional Margherita ingredients—or whatever you may have on hand. And the versatile Baby Eggplant with Oregano and Red Onion works beautifully as a starter or side or as dinner sprinkled with ricotta salata or crumbled feta. Here, too, are Green Beans with Pistachio Pesto, Roast Butternut with Sage and Pine Nuts, and fluffy Mascarpone Mash, Nigella’s twist on mashed potatoes.  Never an afterthought, Nigella’s low-maintenance “sweet things” include Instant Chocolate-Orange Mousse; light, doughnut-like Sambuca Kisses; and One-Step No-Churn Coffee Ice Cream, to name just a few.  Nigella believes that every ingredient must earn its place in a recipe, and she gives tips and techniques for making the most of your time in the kitchen. For example, a stash of sweet vermouth saves you from opening a bottle when you need just a splash. If a recipe calls for the juice of a lemon, Nigella uses the zest, too—that’s where its force and fragrance lie. She guides you to stocking your pantry with a few supermarket ingredients and shows you how to make the most of them for spontaneous meals that taste boldly Italian.  Nigellissima is a love letter to the pleasures of cooking—and eating—the way Italians do. With a nod to the traditional but in Nigella’s trademark style, here are recipes that excite the imagination without stressing the cook. read more
