The cuisine of Puglia is famous for being among the best in Italy. Puglian food is deeply rooted in the traditions of this souther...n Italian region, its geography, and its history as the breadbasket of Italy and the largest producer of olive oil.In this cookbook, beautifully illustrated with recipe and preparation photos as well as images from Puglia itself, first-time author Viktorija Todorovska (a Chicagoan who studied cooking at the famed Florentince culinary school Apicius) has created a memorable introduction to this unsung cuisine. Puglian cooking's two great benefits are of huge interest today: it's very simple, usually requiring little technique and basic prepartion, and it's incredibly healthful, as it's based largely on olive oil and fresh vegetables.Puglian cooking as Todorovska present it here respects the integrity and quality of the ingredients, which should be as fresh high quality as possible. The recipes in this cookbook are simple, the ingredients easy to find, and the dishes bursting of flavor. These are healthful, easy to prepare dishes that should appeal to everyone. read more

An encyclopedic compendium of Italian cuisine, containing 1030 recipes First published in 1930, The Duke's Table is a massive comp...endium of vegetarian recipes from Italy and the Mediterranean. The brainchild of Enrico Alliata, the Duke of Salaparuta, a utopian gourmand and winemaker, the book contains 1,030 recipes. Though much Italian fare is naturally vegetarian, the Duke also worked for years to systematically remove meat from classic Italian dishes, creating an encyclopedic reference work for vegetarians. Alliata, who wrote against the "dietary orthodoxy of the day," was a vocal advocate for a vegetarian diet, which he believed-much in advance of early dietitians -led to a longer, healthier life. Much like The Silver Spoon (first published in Italy in 1950, and in the U.S. in 2005), the book is unique in its scope and scale: its recipes are imaginative, playful and healthy-and all designed for family-style serving. read more

Carina Contini and her husband Victor are the grandchildren of two immigrant Italian families that arrived in Scotland at the begi...nning of the last century. Their families have been at the heart of serving food in Scotland since then. Originally their grandparents were shepherds in the Abruzzi mountains. Weeks on end were spent up on La Meta, the highest peak in the Apennines, with their small flock of sheep and a few goats, making cheese over open fires. In their smallholdings down in the valley they would grow just enough to feed the family, with only a few pigs to supply enough sausage, prosciutto, lardo and salame for the winter. Vegetables like spinach, cavolo nero, potatoes and green beans. When they came to Scotland they opened cafes selling ice cream and then fish and chips and, of course, great Italian coffee. Carina's parents took over the family cafés in Cockenzie & Port Seton in 1952. With the end of rationing the food became more adventurous and Scottish classics also crept in. But remembering their heritage, the freshest and best ingredients were at the heart of everything they did. Fifty years on, Carina and Victor have Edinburgh's most highly regarded Italian restaurant, Centotre, and the award-winning Scottish Cafe at Scotland's National Gallery. They have regularly cooked for First Minister Alex Salmond and are given the special honour of cooking for Sir Sean Connery when he has been in Scotland. Ian Rankin, Jack Vettriano, Pippa Middleton, Brian Cox, JK Rowling and Nick Nairn are all frequent guests. They are passionate about the best local ingredients and work closely with over 50 artisan Scottish suppliers. This ensures that throughout the year they get the best of Scotland's larder. In recognition of her achievements and support for local, seasonal cuisine, Slow Food Chefs Alliance invited Carina to join as its first female chef in January 2012. read more

FROM THE INTRODUCTION BY MICHELE GALLO COOK......... There are a few things you have to understand about this cookbook before you ...try any of the recipes. First, my mother was a terrific cook, and I’m not saying that just because she was my mother. Anyone who came to dinner at our house, and there were quite a few, shared that opinion. She could, with amazing talent, open the refrigerator and create a memorable meal out of almost nothing. This made for great dinners but hard-to-follow recipes! My mother rarely wrote anything down, and for the most part, it wasn’t until I got married that any of these recipes were written down. About a week before my wedding, I asked my mother to make my favorite foods, and then I followed her around the kitchen, badgering her about what went into what dish, how much and how long it was cooked, etc. I still have that first beat up cookbook with the recipes. I am convinced that some of my mother’s recipes can never be duplicated, whether it was the pan she used or a trick of my memory, some things just never come out the same. --Michele Gallo Cook......... .......FROM THE EDITOR/DESIGNER, MARINO AMORUSO....... In a family full of great Italian cooks, Aunt Phil Gallo was by far the best. Felicia Amoruso came to America in 1938 at fifteen-years old from Bisceglie, Italy with her older brother, Vittorio, and her mother, Aurelia. He father had passed away and four of her older siblings, Angela, Marino, Pietro and Giovanna were already in New York. Older brothers Angelo and Francesco had been drafted into the Italian army by Mussolini and could not escape Italy. In 1944 she married a duck farmer from East Patchogue, Long Island named Michael Gallo and they built a wonderful life together until Aunt Phil passed away in 1990. The recipes in the book are by no means everything that Aunt Phil was capable of cooking. She could make hundreds of dishes – all from memory. My cousin Michele, however, has done an absolutely remarkable job in putting this collection together. It features Aunt Phil’s best work. Michele makes just about everything in this book as good as her mother did, which is a high compliment, indeed. --Marino Amoruso read more

Italian-American dishes are what we crave and what we make, what we order and what we wax rhapsodic about. The last century has see...n hundreds of inspired new dishes take their place at the table alongside traditional preparations, resulting in a cuisine that is as current as it is classic. At last, here is the place to look for the tastiest and most definitive renderings of Shrimp Fra Diavolo, Steak Florentine, Pasta alla Primavera, Linguine with Clam Sauce, Spinach with Pignolis, Tiramisu, and all the other treasures of the Italian-American table. In these pages, America's premier restaurant critic, John Mariani, and his wizard-in-the-kitchen wife, Galina Mariani, update and perfect all the classics in lighter, less creamy-and-cheesy versions made with the freshest of ingredients. The Marianis make a convincing case that Italian-American cooking, far from being a watered-down version of Italian cookery, is a full-fledged cuisine in its own right. In fact, as they show in a fascinating introduction, many elements of Italian cuisine in Italy today are actually imports from the Italian-American repertoire. In 250 recipes, they reveal not only how glorious that repertoire is but also how its basic elements may be used in innovative new ways - in a Risotto with Apples and Saffron, for example, or a Pork Roast with Fennel. This is a feast of food, from antipasti and soups through pastas and pizzas all the way to dessert, and also of history and folklore, in the dozens of sidebars and archival photographs that bring to life the family restaurants and home kitchens where these magnificent ethnic dishes are prepared and enjoyed. read more

Now home cooks can re-create these showstopping dishes, just as they are served at the restaurant, to win raves of their own. The Babbo Cookbook is Mario's biggest yet, filled with 150 recipes that have redefined contemporary Italian cooking. Here for the first time he shares such signature dishes as Mint Love Letters with Spicy Lamb Sausage and Beef Cheek Ravioli, all showcasing his unparalleled ability to reinterpret the Italian culinary tradition in a completely original way. Even classic recipes like Bollito Misto and Pappardelle Bolognese come alive again in bright new renditions that delight the palate. Also included are notes on the unique touches that make a meal at Babbo such a singular dining experience, from suggestions on wine service to recipes for "predesserts" that smooth the transition from savory to sweet-all representing the distinctive brand of Italian hospitality that has become the Batali trademark.
