When celebrity chef Mark McEwan takes a much needed holiday from running his restaurant empire, he likes more than anything to hea...d for Italy. His love affair with ingredient-driven Italian cuisine dates back to his earliest days in the business, when his pastas and risottos were a big part of what put him on the culinary map. When McEwan was drawing up plans for a new, fourth restaurant, Italian food was a clear choice. This book is composed entirely of recipes from that restaurant, Fabbrica. From dishes perfectly suited to the summer table, like grilled swordfish with fennel and orange, to the robust fall flavours of kale, sausage, and bean soup, to everyday dishes like the famous Fabbrica pizzas, and even a definitive take on the American Italian classic chicken parmigiana, there are dishes here for every occasion. The theme is authenticity. The flavours are large and seductive. All of the recipes are easily manageable for the home cook, and, following in the format of McEwan’s highly-acclaimed first book, Great Food at Home, all are highly flexible. The only essential ingredient is passion—both for cooking, and for enjoying its results. read more

Simple. Seasonal. Inspired. A father of New American cuisine and mentor to chefs like Bobby Flay, Jonathan Waxman introduced a new... generation to the pleasures of casual food by shining a spotlight on seasonal produce. Now, in Italian, My Way, he shares the spontaneous and earthy dishes that made him a Top Chef Master and culinary legend, and turned his restaurant Barbuto into a New York destination. Waxman’s rustic Italian food is accessible, delicious, and a joy to prepare. It’s food you cook for friends and family with music in the background and a glass of wine in hand—fresh ravioli with pumpkin and sage, chicken al forno with salsa verde, a blueberry crisp. Italian, My Way gives you the confidence to transform simple ingredients into culinary revelations and create bold and robust flavor without a lot of fuss. You’ll make the perfect blistered-crust pizza and spaghetti alla carbonara, the creamiest risotto with sweet peas and Parmesan, and an unforgettable grilled hanger steak with salsa piccante. Waxman breaks down the culinary lessons of Italy into plain English, helping you sweat less in the kitchen and enjoy cooking more. After all, simpler recipes mean less time planning meals—and more time enjoying them. As chef Tom Colicchio writes in his foreword, “This is food that is meant to be made in your home. Cook it with love and for your family and friends. That’s Italian, Jonathan’s way.” read more

It’s time to experience the warm culture of Italy right into your own home. This recipe book will take your senses to the very hea...rt of that wonderful and captivating place. The Italian cuisine is a celebration of their food products. "The Italians serve the spaghetti or macaroni at the beginning of the meal, in place of soup, and they give it the name of Minestr...a Asciutta or "dry" soup." One of the beneficial results of the Great War has been the teaching of thrift to the American housewife. For patriotic reasons and for reasons of economy, more attention has been bestowed upon the preparing and cooking of food that is to be at once palatable, nourishing and economical. In the Italian cuisine we find in the highest degree these three qualities. That it is palatable, all those who have partaken of food in an Italian trattoria or at the home of an Italian family can testify, that it is healthy the splendid manhood and womanhood of Italy is a proof more than sufficient. And who could deny, knowing the thriftiness of the Italian race, that it is economical? It has therefore been thought that a book of PRACTICAL RECIPES OF THE ITALIAN CUISINE could be offered to the American public with hope of success. It is not a pretentious book, and the recipes have been made as clear and simple as possible. Some of the dishes described are not peculiar to Italy. All, however, are representative of the Cucina Casalinga of the peninsular Kingdom, which is not the least product of a lovable and simple people, among whom the art of living well and getting the most out of life at a moderate expense has been attained to a very high degree. read more

Scott Conant’s five Scarpetta restaurants all garner rave reviews, but many know Conant best from his regular appearances on Food ...Network shows like Chopped (as a frequent judge) and on Bravo’s Top Chef. He and his restaurants have been cited on such lists as Esquire’s "Best New Restaurants in America." The subject of this cookbook, Scarpetta, received a three-star review from the New York Times and there are locations in Miami, Los Angeles, Las Vegas and Toronto, all opened in just the past few years. This gorgeous book includes 125 of the restaurant’s signature dishes – Creamy Polenta with Fricassee of Truffled Mushrooms, Spaghetti with Tomato and Basil, Fennel-Dusted Black Cod – written with the goal of teaching readers to master techniques so they learn to really cook, rather than merely follow recipe steps without any thought of the hows and whys behind the method. Until her recent death at 93, Carmela Cusumano was a cook of a vanishing breed. Daughter of Sicilian immigrants, Carmela took to roles in the kitchen as chief cook, devoted wife to a husband (also son of Sicilian immigrants), and mother to ten children with a passion befitting a “performing” artist. In her eighties, Carmela, already a grandmother and great-grandmother nearly fifty times, decided to gather the recipes for her ever-growing family, including the traditional dishes they recalled with nostalgia and also the many baked goods Carmela loved to treat family and friends to. Carmela published those recipes in a spiral-bound book, La Cucina di Carmela. After Carmela’s death, November 19, 2015, her ten children decided to re-publish her book and make it available for anyone who loves to cook and to make simple good food. This is a cookbook of Sicilian and American fare. As the children point out in the Foreword, Carmela, who studied home economics at an American high school where she graduated in the late 1930s, honed her skills in her Sicilian and American household of the 1940s through the 1960s. The recipes reflect her Sicilian heritage and the time and place (New Jersey) where she raised her family. Thus the recipes weave Carmela’s simple fare that she had to stretch to feed her large family with her passion later in life for collecting new recipes from everyone, from her Hungarian sister-in-law to a Texas chef. You will find recipes for homemade pasta, sausage, and eggplant appetizer, for Hungarian cakes and cookies, and that Texan chef’s crab claw appetizer. There are recipes for classics, like Wedding Soup and Sicilian cannoli and pizza and Carmela’s treasured discoveries like strawberry cream cake and pineapple pie. read more

“Tuscan food tastes like itself. Ingredients are left to shine. . . . So, if on your visit, I hand you an apron, your work will be... easy. We’ll start with primo ingredients, a little flurry of activity, perhaps a glass of Vino Nobile di Montepulciano, and soon we’ll be carrying platters out the door. We’ll have as much fun setting the table as we have in the kitchen. Four double doors along the front of the house open to the outside—so handy for serving at a long table under the stars (or for cooling a scorched pan on the stone wall). Italian Philosophy 101: la casa aperta, the open house.” —from the Introduction   In all of Frances Mayes’s bestselling memoirs about Tuscany, food plays a starring role. This cuisine transports, comforts, entices, and speaks to the friendly, genuine, and improvisational spirit of Tuscan life. Both cooking and eating in Tuscany are natural pleasures. In her first-ever cookbook, Frances and her husband, Ed, share recipes that they have enjoyed over the years as honorary Tuscans: dishes prepared in a simple, traditional kitchen using robust, honest ingredients.             A toast to the experiences they’ve had over two decades at Bramasole, their home in Cortona, Italy, this cookbook evokes days spent roaming the countryside for chestnuts, green almonds, blackberries, and porcini; dinner parties stretching into the wee hours,  and garden baskets tumbling over with bright red tomatoes.             Lose yourself in the transporting photography of the food, the people, and the place, as Frances’s lyrical introductions and headnotes put you by her side in the kitchen and raising a glass at the table. From Antipasti (starters) to Dolci (desserts), this cookbook is organized like a traditional Italian dinner.             The more than 150 tempting recipes include: ·         Fried Zucchini Flowers ·         Red Peppers Melted with Balsamic Vinegar ·         Potato Ravioli with Zucchini, Speck, and Pecorino ·         Risotto Primavera ·         Pizza with Caramelized Onions and Sausage ·         Cannellini Bean Soup with Pancetta ·         Little Veal Meatballs with Artichokes and Cherry Tomatoes ·         Chicken Under a Brick ·         Short Ribs, Tuscan-Style ·         Domenica’s Rosemary Potatoes ·         Folded Fruit Tart with Mascarpone ·         Strawberry Semifreddo ·         Steamed Chocolate Cake with Vanilla Sauce   Frances and Ed also share their tips on stocking your pantry, pairing wines with dishes, and choosing the best olive oil. Learn their time-tested methods for hand rolling pasta and techniques for coaxing the best out of seasonal ingredients with little effort.             Throw on another handful of pasta, pull up a chair, and languish in the rustic Italian way of life. read more

The best recipes of two family traditions, by a favorite television actress and talented home cook. No matter how far from home we... go, refining our palates, leaving behind family cooking for sophisticated fare, we all have a special place in our hearts--and stomachs--for our families' deliciously basic, home recipes. Born of the culinary traditions of actress Pamela Hensley Vincent's Jewish family and her husband Duke Vincent's Italian background, The Jewish-Sicilian Cookbook recaptures, with charm, and tasty and do-able recipes, the gastronomic nostalgia of two families. The sixty-four recipes run the gamut from typically Jewish (Yetta's Chicken Soup) to quintessentially Italian (Duke's Special Spaghetti), and represent the best of traditional modern American food, radiating a fifties sensibility that goes down as deliciously well today as it did then. The common ground of all family food traditions is "Food is Love," and this principle is irresistibly at play as Pamela Vincent recounts heartfelt anecdotes, describing memories of meals with loved ones. From a predawn breakfast of buttered matzoh and coffee with her grandfather to pasta night with Duke, The Jewish-Sicilian Cookbook will inspire readers to revisit fond food memories of their own as well as create new ones. read more

This uniquely accessible collection draws together the best vegetarian recipes of Italy-350 in all. 'Pasta and pizza may be Italy'...s most eye-catching exports, but it is the country's varied and sensible use of vegetables that provides the best inspiration for American cooks,' writes Jack Bishop. 'Asparagus spears coated with a little olive oil and roasted to intensify their flavor; thick slices of country bread grilled over an open fire and topped with diced tomatoes and shredded basil from the garden; or a fragrant stew with fennel and peas-Italians enjoy these dishes because of what they do contain, not what they don't.' Many of the recipes were gathered by Bishop during extensive travels throughout Italy. Some are family favorites, adapted from those of his Italian grandmother. All deliver perfect results with a minimum of effort. Serving suggestions for each recipe make planning vegetarian meals easy. read more

It wasn't until I was a student at the Culinary Institute of America in the late 1970s that I first realized that growing up as a ...first generation Italian-American family in the Bronx and New Jersey wasn't as typical as I had thought. My parents and their parents were all born and raised in Italy. Throughout my youth and beyond, my father and mother referred to their five children, four boys and a girl, by the number in the order of which we were born. To this day, my mother still occasionally refers to me as "Number Two Son" But when it came to hanging around the kitchen, I was definitely the number one pest. I was the little punk kid always by my mother's side as she was cooking or baking. I would jockey for position wherever my mother moved, stand on a kitchen chair up against the stove, and otherwise constantly be in her way as I tried to get a better look at whatever was being done. Same when either of the grandmothers - Nona Lisa or Grandma Melfi - or other relatives were there. Maybe it was something in the water around Pisa, but I suspect it's a genetic condition. For my mother, her mother, cousins, aunts and countless generations before them in this food-fueled blood line, the world revolved around the kitchen and dining room table. Life was not good unless family, friends, or anyone close to the dinner table was fed to excess, ritually seduced with course after course of delicious, abundant and temptingly presented food. This attitude seemed to pervade all branches of the family, but my inspiration and mentor was Maria Gracia Melfi, aka Mama Melfi, aka The Food Pusher. The Food Pusher moniker was given to her by one of my friends when I was a teenager. Anyone who was anywhere near our home, at anything close to a mealtime, would have a seat at our table. Attendance was mandatory, as were second and third helpings. It seemed normal read more
