Dutch oven, add about 1 inch of milk to cover the bottom of the dish. Let the milk simmer for 5 minutes. Remove the dish from heat and allow it to cool before cleaning. You can also simmer a quart of water with 1/2 cup of rice for 5 minutes instead of the milk. The Emile Henry Flame covered stew pot is suited for gas, electric, ceramic, glass and halogen stovetops and induction heat with an induction disc. The ceramic Dutch oven is designed for oven, microwave, broiler, grill and open flame to 750 F. Do not heat an empty Emile Henry dish. Use the Emile Henry Flame stew pot with all types of utensils, but nonmetal utensils are recommended to better protect the cookware surface. Always use protective pot holders or oven mitts when handling hot cookware. When heated, the Flame Dutch oven expands slightly. This phenomenon creates small, thin cracks in the glaze, which are more visible on light-colored cookware. These small cracks are not a flaw, but are part of the Flame cookware resisting temperature change and a sign of the cookware's longevity. Emile Henry products are easy to clean by hand or dishwasher, but hand washing helps protect the cookware's finish. Burnt-on residue may be removed by pre-soaking the stew pot for about 15 minutes.
