Bresaola (Punta D'Anaca or Bundnerfleisch) is an air-dried, cured, and aged top round, obtained from the more valuable cuts of the... bovine thigh. Bresaola is intense, with a uniform red color, tender and soft texture, and a delicate flavor and spiced aroma. The origins of the Bresaola and Bundnerfleisch method of curing beef are very ancient, and date back to the time when the alpine populations of the Italian and Swiss region started looking for a way to preserve the meat all year round. They developed the traditional system of storing the meat for winter through rubbing, salting, and air-drying processes. Bernina Bresaola comes from grassfed Uruguayan cattle, raised in the open, with vast fields in which to roam. Grassfed beef is up to six times leaner than grain fed beef. It is a natural source of omega 3 fatty acids, rich in vitamins and minerals with no hormones, no antibiotics, and no animal by-products. The special surroundings of the Uruguayan region, with low temperatures throughout the year and its dry air, make it possible to use less salt in the curing process, therefore obtaining a tender beef with a delicate flavor and aroma. They buy full 200 pound of Gruyere from the farming regions in ...the Canton of Fribourg, then age them in underground sandstone caves in their facility near Lucerne. Made from rich, unpasteurized, Alpine cow's milk, this Grand Gruyere Reserve has been aged for at least one year, compared with the average four to six months. A rustic, somewhat oily rind gives way to firm, smooth textured cheese which is slightly aromatic with a robust, assertive flavor. Wonderful served unadorned with some dark bread and figs, this is also a great melting cheese, and one that lends itself well to gratins, fondues and soups. Made from unpasteurized cow's milk. Queso Cabrales is a natural cheese made in the artisan tradition by rural dairy farmers. This cheese can be made of pure cow's mil...k, but, depending on availability, it can also be blended with some goat and/or sheep's milk as well. All the milk used in its production must come exclusively from herds raised in a small zone of production in northern Spain. Cabrales is aged from two to six months in natural caves in the mountains nearby. In these caves, the relative humidity is 90% and the temperature varies between 45 and 55 degrees Fahrenheit. These conditions favor the development of penicillium molds, yielding veins of blue-greenish color. Cabrales is sharp and tangy, and even more so when made with mixed milks. Like Gorgonzola and Roquefort, it is a famous blue cheese whose name is often copied by inferior competitors. Note: Contrary to popular belief, all imported Cabrales is wrapped in aluminum foil, not leaves (due to EU regulations). Spanish blue cheese wrapped in leaves is either called Valdeon or Picon.
