Queso Cabrales is a natural cheese made in the artisan tradition by rural dairy farmers. This cheese can be made of pure cow's mil...k, but, depending on availability, it can also be blended with some goat and/or sheep's milk as well. All the milk used in its production must come exclusively from herds raised in a small zone of production in northern Spain. Cabrales is aged from two to six months in natural caves in the mountains nearby. In these caves, the relative humidity is 90% and the temperature varies between 45 and 55 degrees Fahrenheit. These conditions favor the development of penicillium molds, yielding veins of blue-greenish color. Cabrales is sharp and tangy, and even more so when made with mixed milks. Like Gorgonzola and Roquefort, it is a famous blue cheese whose name is often copied by inferior competitors. Note: Contrary to popular belief, all imported Cabrales is wrapped in aluminum foil, not leaves (due to EU regulations). Spanish blue cheese wrapped in leaves is either called Valdeon or Picon. Bayley Hazen Blue is a natural-rinded blue cheese made with whole raw milk. Jasper Hill Farm makes batches every other day, primar...ily with morning milk, which is lower in fat than afternoon milk. Ayrshire milk, their specialty, is particularly well-suited to the production of blue cheese because of its small fat globules, which are easily broken down during the aging process. The paste of a Bayley Hazen is drier than most blues and the penicillium roqueforti takes a back seat to an array of flavors that hint at nuts and grasses and in the odd batch, licorice. Though drier and crumblier than most blues, its texture reminds one of chocolate and butter. Aged between four and six months, Jasper Hill developed this recipe by starting with a Devon Blue recipe, changing its shape, and altering the aging process to end up with an edible rind. Bayley Hazen is named after an old military road that traverses the Northeast Kingdom. The road, commissioned by General George Washington was built to carry troops to fight the English on a Canadian front. Ragusano is an ancient cheese made in the Sicilian countryside where they still use age-old techniques and traditional wood and co...pper tools. The hand-made cheese begins with fresh, whole, raw milk and natural rennet put in the "tina" (traditional wooden tub for curdling milk). After the milk sets, the curd is broken with a forked wooden stick (a "ruotula"), then gently cooked with warm water, drained, and gently pressed. The whey is saved for making ricotta later that day. After a few hours, the curd is cooked again in warm water or whey, then removed and allowed to rest in the traditional wooden "mastredda" for at least 20 hours. When matured, Ragusano is cut into long strips, cooked in hot water, and mixed in the wooden "staccio." Using a wooden club called the "manuvedda", the cheesemaker stretches and kneads the curd to create a smooth oval ball, returns it to the mastredda, and forms it into the characteristic shape of Ragusano. Each cheese is marked with the cheesemaker's symbol or name deeply embedded in the cheese. A day later, the cheese is immersed in brine for about 15 days then hung in pairs by hand-made cords ("liame") in the cool, fresh "maizze" where they remain up to two years. Made exclusively from Modicana cow's milk, Ragusano has a soft, compact, savory, slightly yellowish color with a thin, pale yellow rind. Located in Walpole, Boggy Meadow Farm is the only licensed cow's milk cheese producer in the state of New Hampshire. Over the past... 180 years, many traditions have been developed on the farm. Today those traditions continue under the leadership of Powell Cabot, who inherited the farm in 1993. Boggy Meadow Farmstead Baby Swiss is made from fresh, unpasteurized milk taken from Boggy Meadow's own herd of Holsteins. Their herd is recognized for the quality and wholesomeness of its milk. One of the attractive features of farmstead whole milk is the subtle and interesting variation in flavor and texture from batch to batch and even within each batch, throughout the year. Elder mentions Cantal in his "Historia Naturalis" written in the 1st Century AD. Cantal was originally produced by putting the curd into "le formage", a wooden cylinder, which is believed to be the origin for the French word for cheese. Named after the Cantal Mountains in Auvergne, this cheese has been dear to the French throughout history. For example, in medieval times it was the courtly custom to send a gift of cheese to impress or to people one admired. Cantal is made from raw cow's milk with the curd being heated before pressing. This AOC cheese has a smooth, grayish-brown rind with a smooth, pale yellow, close-textured interior. Cantal has a milky aroma, a nutty flavor with a hint of tangy butteriness, and a slightly acidic finish. Aged from three to nine months, it is prone to blue mold (fleur de bleu) which the French gladly eat, but can also be cut off if this is not your preference.
