igourmet.com is saluting blue cheese by offering this International Blue Cheese Assortment, containing four of the world's greates...t blue cheeses. For creating blue cheese in the first place, we owe thanks to a micro-organism named penicillium roqueforti. This microscopic spore attaches itself to a young cheese and spreads blue mold throughout as the cheese matures. Fourme d'Ambert: Fourme d'Ambert is cave-aged for a minimum of two months, made from raw cow's milk and has a tremendous, creamy, full-bodied flavor. (8 oz) Mountain Gorgonzola: Another ancient blue, this one hails from northern Italy. It has a firm yet springy texture and a mellow bite that melts in your mouth. One of the great sandwich cheeses, Provolone Piccante is also an excellent melting cheese that is perfect in omelettes or atop a toasted baguette. We assembled this quartet from among the world's favorite hard cheeses. Such cheeses are perfect for grating over pasta, soup, Cae...sar salad, or any other culinary creation that calls for a little cheese. Parmigiano Reggiano comes from the adjacent regions of Parma and Reggio Emilia and is often called the "King Of All Cheeses". There are many reasons for this title, namely its savory flavor, its huge size (80 lb. wheel) and its history dating back to the tenth century. (8 oz) Grana Padano comes from Italy's Po Valley and is made from the same ancient recipe as Parmigiano Reggiano. Our version is called Stravecchio Oro del Tempo, meaning it is extra aged and hand-selected for quality. (8 oz) Argentine Sardo is a more modern cheese. Initially, it was a copy of a Sardinian cheese called Fiore Sardo, but over time it has developed a personality all its own. (8 oz) Pecorino Romano: Originally from Rome, today most Romano is made on the island of Sardinia. Made in giant 66 lb. wheels, Pecorino Romano not only grates nicely, it also makes perfect shavings for Carpaccio or tricolor salads. (8 oz) Mini Grater: This Mini Grater features a soft cushioned edge for the most comfortable handling while grating hard and soft cheeses. Beer and cheese? This enticing tradition is being resurrected here in the U.S., at microbreweries and dairies across the country. ...Some of the classic combinations are simply divine, whilst contemporary pairing of new world beers and cheeses is yielding exciting results. English and American Brown Ales share many characteristics, and both complement this selection of cheeses beautifully. These hand-crafted ales crave textured, robust and complex cheeses, and that's exactly what we've given them. Pete's, Rogue, Sierra Nevada and Brooklyn Brewery all produce popular domestic Brown Ale, whilst from the other side of the pond, Samuel Smiths and of course Newcastle are easily accessible. Cheshire: One of England's finest, this three month cow's milk cheese has a sweet, caramel-ripe butter smell with notes of straw and a bright acidity - perfect for a nice glass of Brown Ale. (8 oz) Agour Ossau-Iraty: One of our favorite sheep's milk cheeses from the French Pyrenees. A slightly dry texture gives way to a creamy, buttery quality in the mouth, and the flavors hint at both herbs and fruit, with slightly nutty undertones. (8 oz) Extra DOUBLE Aged Gouda: Beemster have created a true masterpiece in their 26 month old gouda, its brittle texture punctured with alternating hints of caramel, butterscotch, whiskey and pecans. This outstanding collection gathers three of Italy's most popular cheeses, and will prove invaluable in the 'Cucinas' of Italian f...ood lovers everywhere. The historic and diverse cheeses in this collection will enable you to recreate some of Italy's magical and time-honored dishes in the comfort of your own home. It includes: Piave: This cheese is named after the river Piave, whose source is found at Mount Peralba in Val Visdende, in the northernmost part of the province of Belluno, Italy. A winding course brings the river toward the bottom of the valley until it reaches the plain at the foot of the prealpi venete mountains in the province of Treviso. Piave cheese is born from the cheese making traditions of the land surrounding the ancient river, in which the curd is cooked and the cheese is aged until it is hard. The area surrounding the river is also where the milk is collected, and this special cheese is produced by a dairy cooperative called the Cooperativa Lattebusche. The cheese has a well-rounded, full-bodied flavor that increases with age and makes this cheese absolutely unique. Grana Padano Stravecchio Oro del Tempo: Stravecchio Oro del Tempo is a superior, 22-month aged Grana Padano produced by Agriform near Venice. This masterpiece compares beautifully with its better-known cousin Parmigiano Reggiano. The flavor of Stravecchio is intense and complex, with fruity overtones that evoke pineapple or strawberry, depending on the season. Like all precious things, every Stravecchio cheese is one of a kind, and each wheel is branded with a unique serial number. Agriform tests the quality of each wheel of Stravecchio every week until the twentieth month of aging. The end result of this rigorous testing process is that only the cheeses that deserve to become prime Grana Padano Stravecchio are stamped with the certificate of origin and guarantee. A true essential, Grana elevates a myriad of dishes, everything from antipasto to risotto, including dessert! (Try with drizzled honey or fine Balsamico). Pecorino Romano: Pecorino Romano is Italy's oldest cheese, dating back to ancient Roman times. This hard sheep's milk cheese is typically aged for one year and used as a grating cheese. Zerto Pecorino Romano, like most Pecorino Romano made today, is made in Sardinia where land and sheep are abundant. read more

Along with their conquering armies, the Romans brought their cheese making expertise to England in the first century AD. Named after a small rural town in the French Alps, a whole wheel of this cheese weighs over 80 pounds. We found it to be creamier ...and richer than other Alpine cheeses like Emmental, Gruyere, and Comté. This raw cow's milk cheese is aged up to eight months in rural Alpine cellars. With each bite, hints of various grasses, herbs, and wildflowers are notable to those with sensitive palates. Its flavor is nutty, creamy, and sweet. Like Gruyere, Beaufort melts well and is perfect for fondue and hot sandwiches. Made from unpasteurized cow's milk. We cut and wrap this item by the 1/2 pound. Queso Cabrales is a natural cheese made in the artisan tradition by rural dairy farmers. This cheese can be made of pure cow's mil...k, but, depending on availability, it can also be blended with some goat and/or sheep's milk as well. All the milk used in its production must come exclusively from herds raised in a small zone of production in northern Spain. Cabrales is aged from two to six months in natural caves in the mountains nearby. In these caves, the relative humidity is 90% and the temperature varies between 45 and 55 degrees Fahrenheit. These conditions favor the development of penicillium molds, yielding veins of blue-greenish color. Cabrales is sharp and tangy, and even more so when made with mixed milks. Like Gorgonzola and Roquefort, it is a famous blue cheese whose name is often copied by inferior competitors. Note: Contrary to popular belief, all imported Cabrales is wrapped in aluminum foil, not leaves (due to EU regulations). Spanish blue cheese wrapped in leaves is either called Valdeon or Picon. Made from pasteurized cow, goat, and sheep's milk. Photo depicts whole 6 lb. form of cheese. We cut and wrap this item by the 1/2 pound. Not quite as salty as Parmigiano, Grana has a fruity finish and slightly softer texture. Our version is called Stravecchio Oro del Tempo, meaning it is extra aged and hand-selected for quality. (8 oz) Argentine Reggianito is a more modern cheese, made from pasteurized cow's milk. Initially, it was a copy of a Italian Parmigiano Reggiano, but over time it has developed a personality all its own. (8 oz) Pecorino Romano: Originally from Rome, today most Romano is made on the island of Sardinia. Made from sheep's milk in giant 66 lb. wheels, Pecorino Romano not only grates nicely, it also makes perfect shavings for Carpaccio or tricolor salads.
