The sandy soil of Morocco's High Atlas Mountains is the ideal location for growing saffron-yielding crocus. At harvest time, the beautiful orange-yellow filaments are carefully extracted by hand resulting in saffron with a lingering perfume... and a slightly bitter flavor.
