Types of Saucepans and Sauciers
Small, medium, and large saucepans are necessary for meeting a variety of heating, cooking, and boiling needs. A specific size of saucepan is called for in a recipe; if that size is not used, expect the mixture to cook slower or faster because the surface area differs. A saucier pan is nice to have for cooking mixtures that involve a lot of stirring.
Large: A large saucepan holds 3 to 4 quarts and is perfect for small-batch soups and stews. Medium: Use a medium-size pan, usually 2 to 2-1/2 quarts, for making sauces or cooking rice. Because this size is commonly used for cooking candy mixtures, make sure this pan in particular is heavy. Small: Small saucepans, 1 to 1-1/2 quarts, work best for small-volume tasks such as melting chocolate or butter.

Buying saucepans can be quite simple. As long as you choose three sizes and throw in a saucier, you're set. Choose from stainless steel or aluminum, and nonstick or not.
Some materials are better heat conductors and cook more evenly than others. Stainless steel with an aluminum or copper core is a good choice, as are enamel-coated cast-iron pans and anodized-aluminum pans. Copper is a great heat conductor, but pans made of copper are expensive, react with acidic foods, and require polishing.
Nonstick surfaces prevent sticking and also require less fat when sauteing. Some nonstick surfaces cannot withstand the heat that other surfaces can, so make sure to read the use and care manual before using. These surfaces may damage more easily than others, and the pans may need to be replaced from time to time.
Lids are important when simmering mixtures to prevent splattering and keep ingredients warm. The lid should be tight-fitting so the heat stays in and does not escape. If you are the curious type, consider a pan with a glass lid; this will allow for easy viewing without interrupting the cooking process by lifting the lid and releasing the heat.
Not only will you hold the handle during the cooking process, you will also need to lift and pour ingredients from the pan. Choose handles that are comfortable and easy to grip. Riveted handles are more secure than those that are glued.
Unless you have a pan rack, stackable pan sizes are convenient, as they can be stored inside one another.
Consider how much care you want to give your saucepans each time you use them. Stainless steel, anodized aluminum, and enamel-coated cast iron will require less upkeep than copper, as it needs to be polished and shined. Whatever material you choose, read the use and care manual to maximize the life of your pans.
Saucepans vary greatly in price. So consider your expertise level in the kitchen, how often you plan to cook, and how much you are willing to pay. Saucepans are a purchase where you truly get what you pay for.
